Potato Cakes
Grate raw potatoes, add an egg (or 2 if making large amount), some nutmeg, salt and pepper, a bit of flour to bind. Add spoonfulls to a heavy based pan with some hot oil flatten a bit, fry on both sides until nice and golden brown. Have either with soup or with pureed apple. The freeze extremely well, are nice in lunchboxes and are very yummy!
Potato and Garlic soup
Large onion, two bulbs of garlic peeled and chopped in half and about 1 kg of potatoes and stock of your choice (best would veg or chicken). Fry onion, add garlic and potatoes let it sizzle for about a minute or two then add stock so potatoes are just covered, bring to the boil, then reduce heat and let it simmer until potatoes are soft, blend soup and serve with crusty bread! Again freezes extremely well.0 -

hi peeps have been tring really hard to home bake and spend less at the supermarket but i need help with my current dilemma i have loadsa potatoes to use up(old) and have about an hour before all four kids need bathing so what can i do with em thats freezable and preferably intresting

Simply peel, boil for half usual time, cool and freeze in batches. Hey presto, par boiled tatties for whenever you need a quick dinner. They can then be used as boiled tatties, or mashed. You can cook from frozen.0

Many of the ideas in these threads will freeze. Mash certainly works welland as you can see, there are plenty of ideas for using up the skins too.

Hi there, I once had nothing in the house for eating and no money to buy anything. The only things I had was potatoes, garlic and veg stock cubes.
