How many things can you do with potatoes.

    I am trying to save money here there and everywhere and I noticed that it is the food budget that really could be trimmed to make the most savings.
    So this got me to thinking about meals and how low the food budget could go.

    So here is my take on one big bag of potatoes from the supermarket and meals for a week.

    1. Take out 4 large spuds and put aside for baked potatoes
    2. Wash and peal (cutting out eyes etc) - save pealings for making potato skins in the oven.
    3. Boil potatoes and mash.
    4. Freeze some mash for meals ( you can vary this by adding mustard or pesto if you want something more than plain).
    5. Take some mash and add s and p and flour and make into potato cakes/scones (have for breakfasts)
    6. Take some mash and add olive oil, s and p, dried origano and flour and make into gnocchi.
    6. Take some more mash and add flaked smoked fish and spring onions and make into fish cakes.
    7. Take the rest of the mash and use it for pie tops (shepards, fish or cottage etc) - make enough for 2 days.

    Et voila - enough to make meals for a week.

    I would love to know if anyone can add recipies to this list as I am going to try it next week.

    Leftover Baked Potatoes I chop when warm and make into a hot potato salad with some mayo, chopped meat frazzled in a frying pan and some chilli, and spring onions.
    I also make Spanish Omelette with them and also Spanish 'Poor Mans' Potatoes where sliced potatoes are fried with onions, garlic and olive oil - sometimes adding some green peppers. Very nice with robust flavours.

    I could make it better myself at home. All I need is a small aubergine...

    I moved to Liverpool for a better life.
    And goodness, it's turned out to be better and busier!

    Hi there annamc, o potatophile after my own heart! Try some of these..........
    cook and mash parsnips, mix with the mashed spud and make into croquettes using breadcrumbs from crusts from home made bread of course, I like to make enough to freeze some for later.

    Flatten a goodly dollop of mash between two sheets of non-stick paper, I like to roll the mix till about the thickness of HM scones, lift off the top layer of paper and cut the mash with a pastry cutter into rounds. If you lay the rounds on the paper to freeze, they will chill down quite quickly. When frozen hard pop them in a bag or plastic box and you have instant topping for fish pie. shepherds or cottage, or just potato cakes!

    Thanks for the idea - in fact we have planted a lot more potatoes this year to balance out the rising cereal and rice prices, so this comes in handy.
    I have never frozen mash before but will start experimenting next crop.
    To add to the list, you could also grate a few (raw) potatoes, add grated onion, flour adn seasoning and press the mixture in a hot frying pan rosti-style. Turn over and brown the other side. In Germany it is called 'kartoffelpuffer'. I expect this will freeze fine as well and you can re-heat it and crisp it up again in a hot oven.

    Pleas could someone provide recipes for potato cakes/scones, potato skins and Gnocchi.

    I have not heard of Gnocchi - what is it ??

    Sorry for all the questions but would love to make my spuds go further !!

    Do bombay potatoes,

    Fry an onion in oil, add a teaspoon of cumin seeds, teaspoon of mustard seeds, and two teaspoons of curry powder, add boiled potatoes and fry till heated through (also nice if there's any left over to bake them in the oven so they go really crispy). :D


    Or Rice onions and potatoes:

    Put a layer of uncooked rice into a greased casserole dish. Slice a large onion and lay on top of the rice, Slice a large potato and lay on top of onion. Pour in stock up to the top of the potato and bake in oven for about 50 mins till the rice and potato is cooked through and the liquid has gone. Serve with sausages, peas and gravy. (serves about 4).
