We make homemade potato salad with our quiche. Just a simple recipe of boiled potatoes, cooled and then added to mayo with a small finely chopped onion & salt and pepper. If I have a lemon in I love to grate the zest into the mayo. Delish!

My Mum bought me a HUGE sack of potatos from their farm shop at Christmas (no, they weren't actually a Christmas present!), they seem to be a mixture of reds & whites. We aren't actualyl big Spud eaters & I am having a recipe block about what to do with them all. So far all I can come up with is pie topping, fishcakes & potato bakes. They aren't really big enough for jacket spuds but I will save the hollowed out skins from mash for stuffed skins where ever possible, but does anyone have any other ideas?
I want to try & have a cheap January & use things up so anything I can do with these would be great, also any less obvious ideas to disguise that they are potatos would be very welcome.
