Boil, slice, fry with a little finely sliced onion, throw a bit of grated cheese over at the last minute, turn out onto the plate and add brown sauce/ketchup as you like.
I did this with some leftover cold boiled potatoes a few days ago. Great way to start the day.0 -
I had roast potatoes for breakfast yesterday - and they were lovely!
I'd previously cooked and frozen them, so defrosted and warmed through quickly in the microwave........I sprinkled vinegar on them with a dip of mayo - yummy.0 -
Boil, mash and then form into waffles giving them a couple of minutes a side in the frying pan, great served with just about anything from butter, jam, honey, egg on top or cheese in fact anything that you would serve on toast0

Try wartime POTATO FLODDIES just wash the potatoes then grate them into a bowl, add enough plain flour to make them nearly dry but not quite and season them with salt and pepper. Then heat some fat in a frying pan and tip the potato in and flatten it to make a big pancake. Cook it gently until the underside is golden, then turn it over using a plate and cook the other side the dame way. I like to add in a little mixed herbs and some celery salt, the kids always loved it with ketchup and we still have it some mornings but I like mine with brown sauce. Hope that helps, Lyn x.0
