    i jsut cut them into wedges, spray with frylite and cook in the oven

    I was going to suggest potato wedges :) cut the jacket spud lengthwise into eight (half, half again, half again) and spray with frylight and sprinkle on some flavouring like paprika or chili flakes and put in a hot oven on greaseproof paper until browned on the cut edges

  • So, in a bid to be frugal, I bought a huge bargain bag of potatoes. I figured it was not only a cheap choice, but a fairly healthy one too.

    BUT, I've never been a big potato fan and coupled with the fact that my husband only eats dinner at home 1-2 times a week, I am worried I may be left with a mountain of potatoes I cant think of how to use. They are rather small so not even ideal for jacket spuds.

    Anyone have any ideas on some different things I can do with them to get them used up (maybe for my packed lunch?) or of basic things I can make and then freeze for another time? I'm a competent cook but only have a few basics in the cupboard/freezer.

    Would appreciate any advice and inspiration!

    Potato salad for lunch (lovely with sliced spring onions)

    I always keep meaning to make macaroons, proper Scottish macaroon, not these fancy coloured ones you get now :rotfl:

    The potato salad idea is one I was going to suggest for packed lunches - lovely.

    You could make and freeze leek and potato soup, shepherd's pies (meat or vegetarian) or fish pies topped with mash, and my mum used to make something along these lines - I always mean to try them myself:

    Am sure they would freeze very well too.

    If you like a cooked breakfast, fried potatoes are delicious (different from chips in that you fry cooked potatoes - in our house they were normally leftovers).

    I've never tried it but you could probably partially roast potatoes and then freeze them, since you can buy frozen roast potatoes. Definitely one to practise with a small quantity first though, in case it goes wrong.

    my favourites are gnocchi (freezes well), spanish omelette and freeze batches of potato side dishes like mash, dauphinoise, boulangerie etc

    Have cracked on with some potato salad and a spanish omlette and boiling up a mountain of potatoes to become mash destined for the freezer.
    Definitely going to try the gnocci though as still have about half the bag left!
