How many things can you do with potatoes.

    I did consider this, but my boys won't eat roasties and I have just sold my deep fat fryer, as we just on't eat many potatoes - s'pose I broke the first MSE rule, if you don't use/need it, don'y buy it - even if it is just a bag of tatties! Doh!!
  • Potato Latkes (Jewish potato pancakes)
    Peel and grate 2 large potatoes (do not rinse off as the starch is essential to help them stick together) add 2 tablespoons of SR flour and 1 egg and season very well with salt and pepper (you can add some very finely chopped onion if you fancy). The mixture does look like its got a lot of liquid in it.
    Shallow fry spooonfuls in a little oil until brown and crsip. Delicios with some smoked salmon on top or a poached egg. Traditionally these are eaten with apple sauce but children seem to prefer tomato ketchup:D
    Not sure about the pork....
    I was off to conquer the world but I got distracted by something sparkly :D

    They sound fab blackandwhitebunny - I'm sure my boys would love them, not sure about the apple sauce, but can def see baked beans & eggs :)

  • pork meatballs -& mash

    mince / puree 1 lb pork with
    1 x apple
    some sage
    1 x slice bread
    1x egg
    make into balls with wet hands
    fry in minimal oil - add onions when lightly browned chuck in 1 pt boiling water bung on tight fitting lid - turn down heat - wander off and do something else for 1 hr
    peel and mash all potatoes

    have some with meatballs and gravy ( which will sort itself out in pan whilst you are otherwise occupied)

    potatoe cakes
    later add flour to rest of mash and make into pastryish consistancy
    ( season as you like)
    roll out and cut into neat shapes 1cm thickish
    or flatten savegly with hand in splattery shapes

    depending on mood

    dry fry in heavy bottomed pan untill gold / mid brown when required
    ( freeze if wanted)-
    serve warm or hot with butter or scrambled egg

    or cold
    or eat hot as they come out of pan - burning fingers

  • oh also you could slow cook the pork in alsorts of things which do make nice gravey to go with mash

    I love pork slow cooked, with butter beans, or cannellini beans, with leeks, in cider. I use garlic, seasonings, sometimes dried porcini, or other veg, etc (varies, but the porcini adds something, can put them in dried in this recipe). Its really yummy. :D

    Sure you could sub the beef for pork, and it uses potatoes too :)

    How about a slow cooker pork curry? You could use thai curry paste and coconut milk or some indian curry paste/random spices and use a tin of chopped tomatoes and add yoghurt/cream at the end.

    You could also add parboiled potatoes need the end of cooking time, or make some bombay potatoes to serve with it.

    Another yummy potatoey indian dish is stuffed parathas, which is basically 2 discs of chapati dough stuffed with a spicy mashed poato(with fried onion, garlic, spices, coriander in it) and then pan fried in a little oil/butter.

    You could also do jacket potatoes with pork cooked with mushrooms, white wine and cream, poured over the potato.

    You could make gnocchi with some of the potatoes and serve with a pork ragu/bolognaise, cooked until the meat is falling apart :)

    ^^ Parmesan on top would be nice :) or made into a gnocchi bake with mozzarella on top and stuck under the grill

    You could make a pork casserole and put thinly sliced potatoes on top and bake in the over until the potatoes are golden and crispy, like lancashire hotpot.

    Make some potato salad :-)

    Defrost the pork and mince it, make it into burgers :-)
    Can't think of anything smart to put here...
