I have the perfect, easy, pork shoulder recipe for you, which goes really well with mash.
I generally use slices of shoulder - no need to chop it into cubes. If it's in chunks, that's fine too. You cook it low and slow so the meat just breaks up into bits when you stir it. This recipe is based on the size of pack I usually buy from Costco, which I think is about 400-500g of meat.
Brown the meat, ideally in a cast iron casserole or stainless steel pot that can go into the oven (though a normal frying pan and separate casserole dish works fine too), then remove from the heat and stir a couple of spoonfuls of flour or cornflour into the juices. Add a couple of apples cut into big pieces (optional - most varieties break down and give a nice sweetness to the sauce) and a couple of handfuls of mushrooms - whole if small or chopped into big pieces if necessary.
Quantities are not exact, just eyeball it or chuck in as much as you have. Pour in 1-2 cans of the cheapest, sweetest cider you can buy. Add water or apple juice (the cheapest is fine for this) to bring the volume up to just cover your meat and give it a good stir. If possible, bring it to the boil on the cooker, then stir and bung the whole lot in the oven on a low temperature (gas 3-4) covered with a lid or foil for the first hour, and stir it occasionally. Then remove the lid and cook it for another hour or so still stirring occasionally, until the sauce has thickened and the meat can easily be broken into suitable sized chunks with a spoon.
If it doesn't thicken enough, mix some cornflour with cold water, then spoon in some of the hot sauce. Mix it well, then pour it slowly into the sauce while stirring vigorously to avoid lumps. Bring it to the boil or put it back in the oven for a while, and it should thicken up nicely.
Serve with mashed potato and veg. I like it with broad beans on the side.
P.S. Mash freezes well just leave out extras like butter/cream/mayo and add them when you warm it up. You can also freeze raw or part boiled, pre-cut chips.Trust me - I'm NOT a doctor!0 -
I found few ideas on the internet and kind of mixed them up a bit to produce a pork hotpot type thing in the slowcooker, which was given a resounding yum yum from all
What I did was this:
Butter the inside of the dish
Layer sliced potatoes
Thin layer of onions
Layered half the pork
Add some peas
Add a layer of sauce
Repeat
Top with final layer of potato
Finish off with the last of the sauce and sit on high for about 5 hours - Delish
The sauce:
1 tin of condensed chicken soup
Thinned with milk
add garlic, salt, pepper, basil, sage, & parsley.
Was really creamy and delish

Hi
Anyone got any healthy ideas for using up uneaten jacket potatoes. OH keeps coming home late and not wanting half his dinner, he'd just throw that bit away but I don't like doing that.
Trouble is we are trying to reduce fat/be healthier and in the past I would have sliced and friend. Seeing as jackets go a bit tough and wrinkly and dry after a day in the fridge so just re-heating isn't very tasty - any bright ideas out there? They aren't massive pots either so not a lot to scoop out and use like mash, plus we like the skins, so would like to use whole thing.

How about Gnocchi:
1. Mashed potato (taken out of the middle of the pre-baked potatoes, mix with same volume of plain flour.
2. Knead together with an egg and some seasoning until smooth.
3. Roll into long "sausages" 1.5 to 2 cm round.
4. Chop off 2 cm lengths and press along the length with your finger to make a "furrow".
5. Drop into boiling water until they rise to the surface (a couple of minutes)
6. drain and serve with a tomato-y pasta sauce.
7. Eat and enjoy!

I was going to suggest simply scooping out the insides of the potato, mashing and then freezing - either as it is or as croquettes (egg wash then breadcrumbs, can be baked or fried) but Green Queen's idea looks much better!0

GreyQueen, this sounds delish :T I'm always on the look out for dishes to use up leftovers.
Do they freeze well or go mushy the way of mashed potatoes, reason I ask I am only cooking for one and rather than just boil up one or two potatoes I cook a few and try and devise ways to use up what's left.Jan - June Grocery spends = £531.61
