Baked Potato fillings

I am trying to find some inspiration for my baked potato. What do you put on yours.

I am veggie and would like to make up a little veg curry - not a pan full but just little bit just enough for my baked potato. So any ideas?

    fry enough veg, when soft add some curry paste, some coconut milk or flaked coconut dissolved in water, and simmer until thickened,

    alternatively you could make up your fave veg curry and feeze it in mini portions to use on baked potatoes

    If I want something quick I saute some onion with some curry powder or paste (whatever I have), add some raisins and some apple, leftover cooked veg (cut small) and half a tin of baked beans. If I have no leftover cooked veg I use some frozen peas.

    Not curry based, but for better baked potatoes, cut in half when cooked, scoop out potato, mash with lots of butter and grated cheese. Pile back into potato shells, bake until golden brown.

    Hard to go back to normal baked potatoes after.

    My all time favourite student food was jacket spud cut in half and fluffed with butter then a massive pile of cheese, tuna and sweetcorn mixed together and bunged back in the oven.

    There are approximately 9 million calories in that little beauty and every single one of them tastes good ;)

    i love mine with mint sauce and mayo. easy peasy, and yummy.

    I have a jacket spud at lunch every day, due to diet reasons. I have to eat high fat and calorie diet.

    I always have a ton of butter ( :eek: ) and normally serve with grated cheddar & salad, tuna-may-sweetcorn & salad, HM curry or HM chilli. You could do either curry or chilli as a veggie dish & very easy to do..must be as i do it :p

    The Americans do this, many a time we had twice baked potatoes when we lived there. You could also mash the potato with sour cream and bacon bits put back in the potato and back in the oven.

    !!!!!! the outside with a fork, then rub olive oil on the skin and role it in rock salt. Then bake.

    Then - scoop out the insides and mash them with butter, milk and nutmeg. Eat. Just throw the skins away.

    Best mashed potatoe you will ever eat.

    Oh God I'm dying for a baked potato now, havent had one for ages. Bought a sack of cheap potatoes that were tiny. They made jacket spuds in half an hour and we had 3 on a plate. Now I can go and get some bigguns and make something nice. What spuds are best for Jackets? In America we used to get russet potatoes, they were fantastic for baking, really floury inside.
