    HIya

    I get a bit bored with regular jackets so last weekend I cooked up ours as normal (80 mins in the oven). Then I cut them all in half and scrapped out all the pototoe and mixed it with some cream cheese, I used the plain one, but you could use any I suppose! I then added some finely chopped spring onions mixed it all up and put the potatoe back into their skins, sprinkled cheese on top and baked for another 20 mins! was really yummy!

    Cream cheese with smoked salmon and chives. You can use the smoked salmon trimmings for this which are less than £1 in our Mr T so posh and frugal!

    Prawns for me too... Love it - actually, had this weekend for lunch at a pub. (ok, not very MSE, but OH was starving, so we had to stop for lunch)

    I saw going to say the same - salmon trimming and cream cheese or sour cream and crumbled bacon 'bits'

    I used to do a lovely Nigel Slater recipe with tinned butter beans, cream and mustard - yuuuuum

  • What about a stuffed baked spud. Bake as normal, cut in half and scoop out the inside, mix with the filling ( I like mushrooms, onion, bacon fried up together and grated cheese) put back into the shells with a bit of extra cheese on top and pop back in a hot oven for 20 min to crisp up the out side and top. You can prepare in advance and put in the oven 20 min before out want them and they look impressive

    I love mushrooms, bacon and red onion just cooked in a frying pan mixed with Philadelphia with herbs and garlic then I cut open the potato and mush it in the top sprinkle on breadcrumbs and grill it for a few minutes til the top is nice and crisp. Yum!

    Thanks everyone some fab ideas - I also like the smoked salmon idea but one of the guests doesnt like fish!
