Have you tried baked sweet potatoes? They're absolutely lovely with cream cheese and black pepper- I often bake a week's worth in the oven (while it's on) and microwave them to reheat for lunches Tuesday to Friday!They call me Dr Worm... Mmm, good thinking! I haven't tried them baked but I do like using them for wedges, all the lovely caramelised sweetness - I bet they'd be yum baked :T0 -
Scoop out the middles once cooked, mix with grated cheese, stuff back in and bake again for 15 mins or so. Yum. Best with beans :-)

sliced leftover sausages and fried onions! mixed with the scooped out potato and popped back in oven to heat up - absolutely delish with baked beans (or without).

How do you store them for the rest of the week - in the fridge? I might start doing this for my work lunches :beer:0 -
I like mine with sour cream, snip in some chives, add really strong flavoured grated cheese and a few drops of worcester or tabasco sauce, yum!0

I can neither add to nor argue with any of the excellent fillings suggested above. However, I would respectfully suggest that these are also “fillings” and are certainly different, which is what the OP asked for ...
BAKED POTATO & EGG
A posher and healthier version of egg and chips. Unfortunately, it isn’t as quick,
Serves 1
INGREDIENTS
1 large potato
1 egg
1 teaspoon of butter
1 tablespoon of milk
METHOD
Wash the potato, then remove any “eyes” and nasty bits. Wrap the potato in aluminium foil.
Cook in the top of a preheated oven at 230°C, 450°F, gas mark 8 for 1 hour.
If you like your potato crisp on the outside, remove the foil after 30 minutes.
It is ready when it gives when pressed.
Wait a few minutes for the potato to cool down a bit. In the meantime, break the egg into a bowl and pick out any bits of shell.
Make an egg-sized circular cut in the top of the potato. Use a teaspoon to dig an egg-sized hole down to the middle of the potato. Put the butter in the bottom of the hole.Put the.egg and milk in the hole.
Put the potato back into the oven for another 10 minutes until the egg is cooked.
ADDITIONS & ALTERNATIVES
Use single cream instead of the milk.
Add 1 tablespoon of grated cheese.
TIPS
Sticking a metal skewer through a baked potato helps it to cook in the middle.The acquisition of wealth is no longer the driving force in my life.0 -
BAKED POTATO & KIDNEY
If you are cooking this for someone else, don’t tell them what’s in the potato and call it “Baked Potato Surprise”!
Serves 1
INGREDIENTS
1 large potato
1 lamb’s kidney
½ a rasher of bacon
1 teaspoon of butter
Ground pepper to taste.
METHOD
Wash the potato, then remove any “eyes” and nasty bits. Wrap the potato in aluminium foil.
Put it in the top of a preheated oven at 230°C, 450°F, gas mark 8.
Whilst the potato is cooking, remove all the white tubes (called the core) from the middle of the kidney using a small pair of sharp scissors. Wrap the bacon around the kidney.
After 30 minutes, remove the potato from the oven. Remove the foil.
Wait a few minutes for the potato to cool down a bit.
Make a star-shaped cut in the top of the potato, and open out the flaps. Use a teaspoon to dig a kidney-sized hole down to the middle of the potato. Put the butter in the bottom of the hole. Push the kidney and bacon into the hole. Season with the pepper. Bury the kidney with as much of the dug out potato as you can. Close the flaps.
If you like your potato crisp on the outside, do not replace the foil.
Put the potato back in the oven and continue to cook for a further 30 minutes.
It is ready when it gives when pressed.
ADDITIONS & ALTERATIONS
Add a little bit of English mustard. Add a little bit of parsley.

My favourite tea when I am only cooking for one is a potato with tuna salad and mayo. Basically tuna, mayo, sweet corn, chopped toms/cuc/onion/spring onion/peppers etc basically anything you find in the fridge all mixed up and piled high on my spud yum!:j0
