My fave is roasted veg and goats cheese. I use peppers, red onion, fennel and cherry tomato and roast with balsamic, thyme and olive oil with the potatoes. Add goats cheese to melt and it is amazing!!!0

I like cheese savoury, or coleslaw mixed with grated cheese, kids like tuna with mayo.0

My fav is scooping out the insides and mashing with butter, grated cheddar, red or spring onion, chopped mushrooms, chopped red pepper, worcestershire sauce, tomato ketchup, salt and pepper, re-stuffing them and baking until tops golden. Absolute yum!At least the fish fingers are still frozen, that's what I keep telling myself (Truly Madly Deeply)0

My favourite is a mixed bean salsa, but I also make a cheese filling that is grated cheese,grated carrot,chopped oniion, seasoning and salad cream)0

Oh I haven't eaten a potato for months I am pregnant and the baby doesn't like them at all!
However usually I fill jackets with
Veggie
veg curry - some frozen veg - mixed bags of frozen veg cauli, carrot, peas sweetcorn etc and I add a desertspoon of pataks curry paste and some passatta - and sometimes some pineapple and apple or sultanas

My favourite is a few scraps of chicken ( left over from a roast ) a few mushrooms, creme fraiche, garlic and a tbsp mustard all heated together in a pan and then spooned onto a hot buttered spud. This is heavenly!!0

My OH isn't keen on jacket spuds, but loves sweet potatoes, so this week I baked him one normal spud, one sweet spud. When cooked, scooped out both, mixed them, added a little butter, cheese, coleslaw and chopped fried onions, a little salt and pepper - put the filling back into the shells, topped with cheese and back in the oven to brown. He's now a convert!0

Evening all, I'm hoping you can inspire me with some fillings for baked potatoes! I love a crispy baked potato, and I want to start having them more often and looking for some different fillings.
Cheese is obviously a classic, we also have them with an egg baked in one half (for the last 15 mins, scoop the flesh out and either pile on the other half, or save and use at a later date). I like grated cheese, mayo and spring onion after having that kind of filling from a potato stall, also love prawn mayo (OH doesn't!) and he likes tuna, mayo and sweetcorn. We also eat them with leftover chilli, stew, curry etc.
