If I have a few potatoes getting past their best, I chuck them in the oven when it's on & have potato skins the next day.
Cut the cold baked potato in half longways, scoop out most of the potato, leaving a layer on the skin. Put them back in the oven to crisp up for 10 mins, then add cheese & cooked chopped bacon before returning to the oven for another 5/10 mins. Delish
True moneysavers would then use the scooped out potato to make fishcakes or similar!0 -

For a baked potato I agree that the skin is the best bit, but for mash you are trying to get the potato inside as dry and fluffy as possible before you mash it. The salt on the skin achieves this but makes the skins very salty.
You could try scraping the salt off I guess.

I do the scooping out then recooking method,

Ive just had me lunch....crispy skinned jacket spud with cheesy chilli beans and tons of butter.....yummyCant beat a good jacket spud!! So easy and tasty and good for you...well maybe not the amount of butter I put on :eek:
