This is one of my favorite spud dishes, lighter than Dophinous spuds but just as tasty.Ideal for Sunday dinner..

You could also peel them then slice into 1nch thick rounds, then saute in oil & butter till golden, serve with cooked breakfast.

OOOH! The most versatile veg known to man. I reckon I could live quite easily on nothing else but yummy spuds. Who says small spuds are no good for baking? It just means you can have two instead of one. More crispy skin. Lovely!

You can prepare as you would for roasties and bake until just starting to colour, then open freeze, bag up and when you want roasties you just reheat in the oven with no extra oil for 20 -25 minutes. You can do wedges the same way as well. I always have some in the freezer just in case my arthritis is playing up and I can't peel the potatoes.
You could do jacket potatoes, different sorts of potato salad, potato fritters or mash
Blessed are the cracked for they are the ones that let in the light

Eh, unless those potatoes are new ones in general and Jersey Royals in particular you won't get a decent potato-salad with them. Nosireebob

Don't worry about using the whole bag up now. Potatoes last a little while in the fridge (better out of the carrier bag).

Wedges would be my number one choice. I used to properly toss them in with oil and various spices but I have since found out they cook just as well put straight onto a non-stick baking tray with a very light drizzle (or spray) of oil and a very teeny sprinkle of herbs and seasoning-fajita seasoning, the schwartz version of which comes in a massive tub from some cash and carrys etc for only about £5, works amazingly well. There is also a lebanese dish which involves big chunks of potatoes, peppers, lots of onions, chillies (according to taste) and sometimes chopped aubergine or courgette as well, a small amount of tomato paste, a lot of freshly minced garlic (can use garlic powder in a pinch), fresh coriander (or any other fresh or frozen herbs you have about) bunged in a thin layer in a large ovenproof dish with a generous amount of olive oil (not extra virgin) and oven baked at about 200c/gas 6 until everything is nicely cooked and roasted. xx

    What the title says really.

My Dad has an allotment and he grows a fair amount of potatoes each year.

Yesterday he turned up with a big bucket of potatoes which are lovely and fresh but the thing is I don't really know what to do with them.

So any (polite) helpful suggestions would be much appreciated as I don't want them to go to waste like they did last year

    Thank you :)

Ps there's one unfussy vegetarian in the house (me) and one fussy meat eater (DD)

  • Store them and use them as you need them. Crikey - do you really need to be told this?
