    Alternatively if you really like fried potatoes try doing them in Fry Lite spray instead of oil.

    I often freeze cooked baked potatoes and can then defrost them as needed. I do a huge batch in the oven as it saves on cooking costs.

    You need to think a little out of the box. Instead of thinking "it's a leftover baked potato", consider it as any one of the following:-
    • Proto-mashed potato.
    • Potato skins waiting to be sprayed with oil and then baked /stuffed and baked.
    • A small baked potato that just needs a quick zap in the microwave to heat and then add topping.
    • The mashed potato component of gnocchi.
    • The mashed potato component of potato-based pastry. (Don't ask me for a recipe, I've never made it. But I have eaten it once and it was soft but lovely.)
    • Potential oven baked potato wedges. Chop carefully, spray with oil then bake until hot and crisp.

    GreyQueen, this sounds delish :T I'm always on the look out for dishes to use up leftovers.

    Do they freeze well or go mushy the way of mashed potatoes, reason I ask I am only cooking for one and rather than just boil up one or two potatoes I cook a few and try and devise ways to use up what's left.

    I'm not Grey Queen, but I can tell you potato gnocchi freezes beautifully. Freeze it before you cook it. Preferably on open trays and then bag-and-tag. Cook from frozen - don't defrost first - just throw the gnocchi into boiling water and wait for them to rise.

    If you want to freeze cooked gnocchi, cover it with sauce and refreeze it. Then defrost and zap as normal in the microwave. It may get a little gluey.

    Slice thinly, add some sliced peppers and onions and make an omelette?

    Add tuna/beans/grated courgette with egg and some herbs and spices and grill for low fat 'burgers'?

    An excellent idea, considering the silly prices McCain charges for 2 :o.

    Also handy to mash a few up and freeze in small quantities to rescue soups / stews / casseroles if you have been heavy handed with the salt or chilli peppers :D.

    I like to slice potatoes and layer them in an oven proof dish with salt and black pepper between the layers. I then pour stock over them and top with a tiny grating of cheese and cook them for half an hour or so!

    Sort of a low fat daphunoise (sp?)!!

    I usually cook a couple of extra baked potatoes so I can eat them cold the next day!
