    I wedge them and then par boil them then separate into portions to freeze. That way I can have home made potato wedges without all the fuss.

    freshly boiled new potatoes with freshly ground black pepper & salty butter :drool:


    potato main meal salad

    mix diced cooked potatoes while still hot with vinaigrette dressing, then add as many as you like of ... cooked green beans (my favourite) crispy bacon, hard boiled eggs, finely chopped sweet/spring onion, ham, drained tuna etc etc, serve warm or cold with crusty bread


    spicy potatoes with seeds

    2 lb potatoes, cooked & cooled
    1-2 Tablespoons oil
    2 teaspoons cummin seed
    2 teaspoons black/brown mustard seed
    2 Tablespoons sesame seed
    1-2 teaspoons salt
    1/8 – 1/2 teaspoon chilli powder
    1-2 Tablespoons lemon juice

    1) cut potatoes into 3/4″ dic
    2) put seeds into hot oil, as soon as they begin to pop, add potatoes, stir fry 5 minutes
    3) add salt, chilli & lemon juice, stir fry for another 5 minutes, or till potatoes are heated through & have brown crispy patches on them

    I like to peel and slice into circles. Then put in oven dish and cover with milk. Roast in oven until golden.

    You could also add pieces of cooking bacon and onion, very tasty.:cheesy:

    you forgot good old macaroon bars for pudding!

    1 medium potato, boiled no salt until really soft then mash and put through a sieve until no lumps, add 1 large packet icing sugar, bit by bit - it will look like soup at one stage but keep going and in the end you end up having to knead it like bread, shape into bars leave out overnight to let dry out, dip into chocolate then roll in toasted coconut - fantastic!

    what about mashed tatties frozen like the supermarket sell?

    Fishcakes or veggiecakes?

    I use up leftover mash and veg add some cheese and form into patties and freeze. I fry them when I take them out but they're really tasty.

    Potato bakes, huge variety of options.

    Par boil and wedge cover in a variety of herbs and spices and freeze, wedges without labour! You could also do normal chips in the same way.

    Potato and leek soup.

    Baked potatoes, if you know anyones that's having a BBQ your dish is ready ;)

    Potato salad. Hmm I can't think of any other right now.

  • For me has to me good old cheese and pot pie with sausages and beans. This is a firm fave in our house and so comforting.

    Twice baked jackets pots, spinach and pot curry, rissoles, corn beef and potato cakes, bubble and squeak.
    Want to be debt free by Jan 2014 after letting things sprial out of control :o
