    OH cooked last night and steamed all the spuds he brought home from his allotment:rolleyes: I've now got 3 lbs of cooked potatoes in the fridge that I'd like to use up today (cooking for 5).
    I've also got cream that must be used today and stacks of eggs.
    All ideas welcome please (sooooooooooo determined not to waste a scrap of food in this house if I can:D ).

    You could mash and then freeze them, if you don't want to eat them tonight.

    Frittata? I think that uses eggs and potatoes. Not tried it though.

    Hi annifranakapan,

    My first thoughts were that you could roast them and freeze them or use them to make potato wedges if you don't want to eat them today, or make a flavoured mash.

    If you have some onion and bacon as well, you could make tartiflette: fry sliced onion and bacon pieces, then add the cubed cooked potatoes and fry together a bit more. Place in oven dish, put some sliced cheese on top and pour cream over. Cook in oven until bubbly and golden.

    That doesn't get rid of your eggs yet, but they will probably last a bit longer.

    How about making fish cakes? You can sue tinned salmon, tuna etc and use an egg to bind it.

    Also, depending on what else you have in, why not use the potatoes to top a shepherds pie / fish pie, which can then be frozen, ready for another day?

    I have to say, I also like leftover mash with a fryup!

    Mash and mix with some flour so they are stiffish, and make potato cakes, nice with brekkie, or use instead of waffles or chips. They freeze ok too.

    Somewhere on here I got a recipe for cinnamon rolls, these use mash as one of the ingredients and they are delish! Worth a hunt.

    Mash can also be added to bread dough as well, sure there's a thread about that somewhere too.

  • Thanks everyone. I've made a huge frittata in the oven rather than frying pan. There's enough there for dinner tonight, lunch tomorrow and some left over for packed lunches.

    Should have said that I really didn't want to mash them as they are lovely and waxy with really thin skins - yum.

    Hiya,
    I went to tescos last week and insted of getting a 2.5kg bag I paid an extra 20p for a 5kg value bag, the problem is what to make!
    I have the usual store cupboard things in + carrots, parnips and a small bit of sweede and an onion.
    I have made a roast, done dinners with mash and have made a load of cottage pie, which i have freezed.
    Has any one got anymore ideas/recipes which might help?
