It was DH's turn to cook lunch today as I had to go into work this morning and he got a little carried away with our first crop of potatoes from the allotment.... despite eating loads at dinner we literally have 2lbs of mashed potato left over!! :eek:
I'm loathe to throw it away as it's made from our first ever, ever crop (and he made it with butter and rosemary - also from the allotment - so it's really yummy).
I'm very new to cooking so I'm not really sure what I can do with it. I'm a veggie (he's not but loves veggie food) and I have the usual store cupboard basics available to use.
Any suggestions would be greatly appreciated

You could do a bubble and squeak, any left over veg, chuck it in. Or you can portion it up and freeze it. I do and its ok. I like fried mash when I've taken it out of the freezer and its thawed, but I'm just so unhealthy!! lol0

Freeze it, just put portions in a freezer bag, then reheat in microwave.
Or store in fridge for a couple of days.
Or next day, add some grated cheese, mix together, then fry little pats of it in a little butter. Lovely!What goes around - comes around

Fishcakes for him and cheese/chive/mash cakes for you? I think that parsley sauce would go with both. For fishcakes you need equal quantities of fish to mash0

Mix it with chopped/grated onion, shape into flatish rounds, brush on some beaten egg and cover with breadcrumbs, then lightly fry.
Edit: In case any of you are wondering why I'm giving cooking/food advice when usually I'm asking it................this came from friend. :rotfl:

Cheese, onion & potato pie.
Fry onions til soft, mix with potato & tons of grated cheese. Put into a dish. If you're feeling generous put some sliced tomato on top & chuck in oven for 30mins. As your mash already has rosemary in this would be scrumptious me thinks

Oh now that does sound wonderful! We've got red onions to use from the allotment and some parmesan that needs to be used as well so I think I'll be doing this for tea tomorrow.
Isn't it funny how quicky things change? A few weeks ago (pre-MSE) the whole lot would have gone straight into the bin but know I've got the sense to ask for advice and get 2 more meals out of it at the very least :T0 -

How about savoury potato cakes? I think you just mix the mash with some flour and perhaps a beaten egg, and roll out like pastry then cut into squares or triangles. These can be frozen too, and used as part of a main meal, e.g. instead of chips or garlic bread.
