  • Many thanks for all your suggestions, very much appreciated.

Just one more question - how do I make breadcrumbs without a food processor?

Just use a grater on the fine side. Bread needs to be on the older side though. :)

If you have a liquidiser you can do it in that. Tear whole slices into quarters - ish. Take one of those quarters and rip it into maybe four bits and put those bits into the liquidiser. Whizz for as many (few) seconds as it takes and then tip them out into a bowl. Repeat for the other quarters and then for as many slices as you need.

Or maybe even a veggie shepherds pie made with that soya stuff? That should be freezable too (although others may be more knowledgeable on that!)

  • Hi Squeaky - is a liquidiser the same thing as a blender?

What can I do with left over mash other than reheat it? I'm doing bacon, eggs, beans and will use this instead of chips tonight. I don't have any mushrooms or onion defrosted, though I guess I could do so in the microwave.

    Thanks

    Catt xx
  • Fry it -fried mash is delicious especially if you fry it in bacon fat. Let it go brown and crispy on the bottom before turning it over.

    Bubble and squeak
Potato cakes -add enough flour to make a rollable dough, cut into rounds and fry.

    Potato Refrigerator Dough:

1 tbsp dry yeast (or 1pkt)
    1 1/2 C warm water (lukewarm)
    1C Unseasoned mashed potato
    2/3 C Sugar
    2/3 C Butter or Margarine
    2 Eggs
    1 1/2 tsps salt
    6-7 C flour

dissolve yeast in warm water, stir in potatoes, sugar, butter, eggs, salt and 3 cups of flour. beat till smooth. then mix in enough flour to make a dough easy to handle
turn on to lightly floured surface and ,knead until smooth and elastic (about 5 minutes) place in a greased bowl making sure that the top of the dough gets lightly greased as well.
cover bowl tightly and refrigerate AT LEAST 8 hours but NO LONGER than 5 days. Bake at 400F (200C/Gas Mark 6)

simply take as much dough as you want at one go, this makes enough to bake quite a few things during the course of the week.

Heat it and pile it with the baked beans! Make a well in the mash pile and fill it up. Food from heaven.

You could always freeze it and use it later - dunno what it will be like though as I pinched the idea from Aunt Bessies - I saw some in the freezer of my local supermarket.
