Storing beet root?
I've bought some vacuum packed beet root today at aldi. There is six in the packet, which I am unable to eat in one sitting, so I'm wondering how to store it to stop it drying out. I have empty jars and there is a little liquid in the pack, but not enough to cover it. And I've no pickling vinegar or anything like that.…

Diabetic cook book recommendations please
Can anyone recommend a good cook book for a newly diagnosed Type 2 diabetic? Just for every day meals, but not using artificial sweeteners (apart from xylitol, which I have read is natural). Thank you (please note, I'm not asking for medical advice) :)
