Storing beet root?

I've bought some vacuum packed beet root today at aldi. There is six in the packet, which I am unable to eat in one sitting, so I'm wondering how to store it to stop it drying out.

I have empty jars and there is a little liquid in the pack, but not enough to cover it. And I've no pickling vinegar or anything like that.

Probaly a long shot, but I would like it to last a few days if possible?

Any ideas?

    If I buy the vacuum ones I empty the contents of the packet into a lidded Tupperware and it seems stay just fine. I am a beet root fiend and eat it quite quickly but not had any dry out or go off.

    I thought of that, but was worried about the Tupperware being stained.

    I usually buy them with 3 or 4 in, and have them as part of a salad, never had as many as this before. I'm not planning salad anytime soon, I just had to have them lol

    You can freeze it :D what you need to do is slice into pieces. I use a baking tray but a plate or anything will do. Put baking parchment or greaseproof paper down first. Then open freeze in the freezer, then just bag up and when you want some just take out a few pieces at a time.

    If younare worried about stains. Then you can just keep it in a food bag. ;)
