    Just remembered another one that i have not made for a while although i just throw the lot into the food processor for this one.
    2 tins of smart price or bettabuy tuna in brine - drained
    2 small chopped onions
    Black pepper
    Half a small jar of low cal mayonnaise

    Gorgeous on brown bread

    left over chicken with mayo and curry powder is delicious!

    Jam sandwiches, or to spice them up jam and cheese! you should really try that.

    we have been buying large joints of beef or ham and having some for dinners then slice the rest up for sarnies with mustard etc...

    tesco value cocktail prawns with mayo and ketchup mixed together with crisp lettuce.

  • Whenever we have curry we keep the leftover meat for sandwiches.Great with a bit of salad.

    It's really a matter of whats left over. I tend to bulk buy tuna when on BOGOFF and always have eggs in. If I get reduced tomatoes I am happy with atomato sandwich. This morning (I was out last night and didn't have time to make anything) I took two breadcakes (one of which I have eaten!) and some fruit in - inexpensive lunch.

    In the meantime will someone put me out of my misery and tell me what quark is!

    Quark is virtually fat free soft cheese and although it dosen`t taste like cheese is great for sandwich fillings.

    It may sound a bit odd, but beans make delish 'pates' that make good sandwich fillings. Because they are beans they are not dry and eat well. I don't put in the garlic when I use it for sandwiches - social reasons! :D

    At its simplest I drain a can of value red beans, let them drain well, mash them and season to taste. I add some 'instant' lemon juice.

    It also goes well into couscous or bulgar wheat as a cold take it in a container lunch.
