I like to make "Coronation Tuna". Like tuna mayo, but add some mild curry powder, some sultanas and some flaked almonds as well. It's livens up tuna mayo and makes it go a bit further too.
Homemade hummus is also great. Really quick in the blender and cheap, and lovely with grated carrot.Yeah, whatever. I'm a grown up, I can take it...0 -
cheese and beetroot is good, as is almost anything with some nice homemade chutney (marrow chutney and cheddar is a favourite here at the moment)
I also quite like potted dog at times, or sandwich spread, either on its own or with salad and/or cheese.
Home made hummus is cheap and tasty, as is h/m coleslaw!0 -

One of the offspring had sliced ham, with soft cheese & pineapple mixed togeter & spread on the bread in place of butter/spread.
We also have:-
Tuna mixed with vinegar[don't do mayo:o ] & cue
Corned Beef
Cheese with:- pickle...cue...tomato...lettuce...alone...to be toasted...onion...& any combination thereof:D
Ham with/out ^^ accompaniment
Cheese & Ham
Meat Paste
Marmite
etc etc
I find that by using different bread also adds variety, so sometimes its soft rolls, or pitta, or those french bread batons.
Things like tomato, cue & onion I will slice up & put in a seperate box so the eater can add their own at lunchtime to prevent the bread getting too soggy.
There's fruit bread, jelly, trifle, blancmange, fresh fruit salad, couscous, pasta...I make the little jellies etc in plastic cups that you would use for drinks at a party, then you don't have to worry too much about them not coming back home:D Ditto plastic cutlery, often kept after a cuppa when out with me muvva;)Full time Carer for Mum; harassed mother of three;loving & loved by two 4-legged babies.

I don`t know if this could be considered exciting, but I really like cheese and celery. I first got hooked on this when I bought a pack of sandwiches from M & S.
It is just grated cheddar and grated celery mixed with some mayo and seasoned. You could alter it to your own taste by adding cream etc.

I make alot of ones already said. Also BBq chicken.
I have a jar of tesco BBQ seasoning, from the herbs and spices bit, mix with leftover cooked chicked and mayo. I put it in a small tub in fridge and only make up before eating. By having it in the flavoured mayo in the fridge it tastes really good.
I also make sarnies up and freeze them, buy meat when reduced.0 -

I think the 'potted dog' is a local name, cos I spose its one of those things where they could chuck anything in and you would be none the wiser!
its what we've always called it - it does make the dog look a bit worried tho!0 -
Sometimes I use meat paste in place of butter/spread & if its beef add slices of tomato, onion etc & for chicken go more for lettuce & cue.
Yesterday one of the offspring had his favourite....drain a couple of pineapple rings/chunks from a tin & break up with a fork. Mix it into a good dollop of soft cheese & spread onto one slice of bread. Add slices of ham, put the rest of the cheese & pineapple on top & add the other slice of bread.
Me muvva still has shop bread so saves the wrappers for me to use as sandwich bags--she doesn't bother saying anymore, that it's an embarrassment when the offspring take their lunches out at work & it's not in a 'pretty' bag....at last! I've won an arguement:jFull time Carer for Mum; harassed mother of three;loving & loved by two 4-legged babies.
