When I roast a chicken, we have a nice chicken dinner. Then, after the bird has cooled off a bit, while watching TV, I pick the carcass clean. (It's kind of an icky job - my husband can't stand to watch.) There is a lot of delicious tender meat on the back of the bird, and I always fill a Tupperware container with chunks of meat. This meat is good for making pasties and stir fries, and it also goes very well in a sandwich, chopped up with a bit of spring onion and mayo. If I roast a chicken on Sunday, I'll have enough lunch meat for my husband's sandwiches until Friday (when we don't eat meat.) Plus, I simmer the carcass for stock, which I can use in Friday's mushroom risotto! So, that's two dinners and four lunches from one small bird!

Some personal faves include
chopped banana (even better with toast)
sliced apple and raisin
sweetcorn relish
jam
mushy pea and ketchup (even better warmed in microwave for a minute- don't knock it until you try it)0 -
My MIL does grated cheddar cheese, grated carrot, grated onion & salad cream (could use mayonnaise). It's really nice.0

some of my fav sandwich fillings are:
- canellini bean pate (blend cannellini beans with tomato puree, a few sundried tomatoes, lemon juice, black pepper, chilli powder and basil)
- linda mccartney sausages (cooked, cooled and cut lengthways) with salsa
- egg mayo with chives and tomato
- banana & chocolate spread (yum, but not so good for the waistline!!)
my OH takes menus from sandwich shops and copies the fillings!! :rolleyes:
im also going to try the pasta in the thermos thing i saw on one of the other threads - im really lazy and hate doing dishes in work so that should work out perfectly!!0 -
I should get my husband to read this thread.
He's obsessed with jam sandwiches for lunch and has been for years.
Unhealthy beast.
His argument is that it has fruit in it so it can't be all bad."carpe that diem"0
