Just realised I don't have any butter/block margarine and want to make some basic biscuits or simple cake. Quick help please - is this pork ok to eat?

Does anyone have any recipes for courgettes that have got a bit too big but are not quite marrows? Preferably (but not necessarily) vegetarian, and definately not a chutney recipe!
