Mourgettes/Carrows!

Does anyone have any recipes for courgettes that have got a bit too big but are not quite marrows? Preferably (but not necessarily) vegetarian, and definately not a chutney recipe!
Left it a few too many days to pick them and they are just a bit too big to be treated as a courgette iykwim?

    A bit of a late response, but how about stuffing them? I'd cut them in half lengthways, scrape out the seeds, cut them into bits if they're really big and won't fit in your baking dish, then stuff them with something like veggie or meat-based chilli or bolognese and bake long and slow until tender.

    Alternatively, if they're not too watery, you could chop them into chunks and roast them with some other veg to make a veggie lasagne filling (mixing the roasted veg with pesto before making the lasagne is particularly tasty, I've found :)).

    I hope that's of some help - I'm trying to remember what my DF does with overgrown courgettes - I'm growing my own for the first time this year so haven't yet had to deal with the problem myself! ;)

    I don't eat chocolate but I made this chocolate cake with some of my mourgettes/ carrows (one was 2kg!)...

    and it got rave reviews from my colleagues. You cant taste the courgette and it is super soft moist.

  • Another vote here for scooping out the middle and baking with a ragu or chilli in the middle. Very yummy!

    I just peel and scoop out the fluffy middle and chop into any curries, chillis, pasta dishes to bulk them up. Tonight we are having left over chilli, bulked up with onion, tomato and courgettes; with a nice plate of potato wedges.

    How about soup? Soften an onion, or 2 depending upon how many big courgettes you have and throw in the chopped courgettes plus an equal quantity of carrots. Add chicken or veg stock cube and water . Once cooked puree with a hand blender. Yum yum.

    what about a veggie courgette slice? cooked and cooled and served with salad its lovely, I have one in the oven atm.

    preheat oven to 180 degrees,

    grate one marrow/overgrown courgette or as many normal sized courgettes as you like,

    Chop a couple a large onion or 2-3 small onions and cook onthe hob until clear

    about 50g of melted butter

    roughly a cup of cheese

    roughly a cup of SR flour

    3 eggs


    All I do is bung all the wet ingredients and flour into a mixing bowl and mix with a wooden spoon, then I add the onion,courgette and cheese and mix well. Line a rectangle roasting tray with greaseproof paper and bung the whole lot in this. Add a few sliced tomatoes on top if you want to, sometimes I do sometimes I do not, it depends on if I have any spare. Bung in the oven for about half an hour, the top should be golden and it should be spongy but not wet to the touch. Let it cool on a rack and serve with salad.

    I do this once a week to use up the glut of courgettes or carrows :rotfl:

    Thankyou everyone for your responses!

    Stuffing them with chilli is a great idea, I have a load of chilli in the freezer, so thats a nice easy meal in the pipeline. I think they are a bit too watery for roasted veg but I love the idea of the pesto, I think maybe I could halve them, scoop out the middle bit, spread with pesto and stuff with breadcrumbs, pinenuts and parmesan?

    Ladyhawk, what a great idea I totally forgot about courgette cake! what a div I am:o Brilliant idea, thanks for the recipe!

    Marrow wine, now theres a thought. Now two years ago I bought a demijohn and some other kit for wine making and I have never used it because I am a little unsure as to how to go about it- and also a bit cowardly! Do you have a recipe or method for this?

    I knew I could rely on the 'old stylers':T I have plenty of 'mourgettes' and potentially plenty more in the future so I can use all your ideas, even the wine. I just have to gird my loins for that one:rotfl:

    Thanks, soup is a great idea. That's lunches next week sorted then!

    You lot are absolutely brilliant, you really are! I love courgettes when then are slightly bigger than finger sized, can't eat enough of them. But if I get to the allotment when it's rained and I've missed a day or two and I'm faced with bagfuls of carrows I get a bit downhearted - but no more!
