  • I'd just like to say this thread is very useful, we've also got a glut of courgettes to use up. First time growing them this year, can't believe how many you get! We had a really big one that was on it's way to becoming a marrow. We used some every day in whatever we cooked, (curry, ratatouille) and left the remainer in the fridge. It lasted about a week and was still fine to use every day. :)

    What we've also started doing with it is frying it gently with lots of garlic and seasoning and having it with couscous, really tasty!
  • I made a couple of these into a veggie curry last week. I did two very large courgettes, two onion and a small butternut squash. You could use any saucy curry recipe for it depending on whether you prefer creamy or tomatoey curry, but it was delicious. I'll be using courgette in curry again.

    Realised I had all the ingredients for the courgette cake in the cupboard, it is a great storecupboard recipe. So now I have 2 choclatey courgettey cakes in front of me- I won't tell OH about the courgette content untill he has tried it. The good news is, it's rather nice...the bad news is I have burnt my tongue! Never have been very patient!
    So that's 1 & 2/3rds Carrows down, only 4 & 1/3rd to go!

    Do you have a creamy curry recipe Go-it-spend-it? I have a load of pumpkins and squash that I am coddling lovingly and I am always after new recipes and ideas that incorporate these. I just LOVE growing them!:o

    Thankyou Patchwork cat, that looks very nice, lovely and summery! I am cooking a beef stifada for OH tomorrow night and I was wondering what I would do for myself (I'm the veggie)- that looks pefect:T

    I've just used an overgrown courgette as a lasagne sheet replacement. I sliced it up really thin and layered it between my lentil, spinach and tomato filling as if it was pasta. A slightly odd one perhaps, but it worked really well!

    Thanks Lizling! I will happily copy that recipe and I suppose by layering tomatoes and lentils with layers of potatoes, aubergine and overgrown courgette you'd end up with a sort of veggie moussaka? That might be nice too!

    Cut into slices with the seeds scooped out, bake in an ovenproof dish on around GM4 for half an hour, then add cheese sauce and cook for a further 15 minutes, top with some extra cheese or a mix of cheese and breadcrumbs, and put under the grill to get a crispy top. I served it with veggie burgers (the soya type) and my DH who is a meat-eater, loved it.
    Enjoy the little things, for one day you may look back and realize they were the big things.

    and it got rave reviews from my colleagues. You cant taste the courgette and it is super soft moist.


    if you google zuchinni bread recipes you'll find tons, also good for use in muffins the same way, basically you taste the spice not the courgette. zuchinni bread is very popular in the states and whilst lovely on it's own is also quite nice with a cream cheese icing which you will probably also find if you google the bread recipe

    courgettes are great for bulking out baked goods, adding nutritional value and making them lovely and moist
