    The OH has just had a stroke of genius - rare!

    We had a couple of carrows. He hollowed them out, cut them in half and stuffed them with a cheesy pasta, garlic and bacon bake thing.

    I was impressed. Here's the recipe - to make it veggie - just leave out the bacon/pancetta

    Cut the courgettes/carrows in half and scoop out (like a mini canoe!) and bake in the oven (gas mark 5) for 25 min. Cover the tray with tin foil to stop them burning and to help them self-steam. When done - just empty out any residual water.

    Meanwhile...

    Cook your pasta - use small shapes - like gnocchetti sardi - strain...

    Fry some diced onion until it starts to colour, chopped garlic and pancetta (or whatever you've got left!!!) anything goes - as long as it's cut up small. Add herbs if you want to!

    Add pasta to fried mixture and spoon into courgette/carrow canoes. Cover with grated cheese (cheddar will do) and parmasan. Season with a dash of pepper and a splash of olive oil. Bake at gas mark 5 for 20 mins.

    Redress with more oil if desired.
