    Are you over cooking it....very easy to do as fish cooks very quickly, and overcooked fish is one of the most unappealing things one can eat.

    Fish fillets dusted very lightly with seasoned flour and shallow fried over a medium heat are very easy to do and delicious to eat.

  • Bake in the oven, topped with skinned chopped fresh tomatoes and chopped onions. Lightly grease the pan first, and add a couple of tablespoons of water. Bake in a moderate oven (about 180-190 deg) for about 15-20 mins depending on thickness of fish.

    We have a ton of sea bass in the freezer from the last fishing trip and are doing this tomorrow. I'm sure it would work with any white fish.

    I've also done macadamia nut pesto-topped fish before which was delicious, but my favourite is mediterranean baked fish with salad and cous cous. Yum!

    This won't taste bland ...

    FISH CURRY

    Serves 2

    INGREDIENTS

    300g of white fish
    1 clove of garlic
    2cm (1 inch) piece of fresh ginger
    1 onion
    ½ a teaspoon of chilli powder
    1 tablespoon of garam masala
    ½ a teaspoon of ground turmeric
    1 tablespoon of vinegar
    200ml of milk
    50g sachet of creamed coconut
    1 tablespoon of oil

    DEFROSTING

    You can cook the fish from frozen.

    METHOD

    Chop the fish into 2cm (1 inch) pieces. Peel the garlic and chop it into tiny pieces. Peel the ginger and chop it into tiny pieces. Peel the onion and chop it into thin slices.

    Mix the chilli powder, garam masala, turmeric and vinegar in a cup to make a paste.

    Warm the milk in a saucepan on a low heat or in a jug in the microwave. Add the creamed coconut. Stir until the coconut has dissolved.

    Put the oil into a frying pan on a medium heat. Fry the garlic, ginger and onion for about 3 minutes. Stir frequently to stop it sticking.

    Add the spice paste and cook for another 5 minutes. Stir frequently to stop it sticking.

    Add the milk and coconut, and the fish. Stir thoroughly.

    Bring to the boil, then turn down the heat until it is just boiling (simmering). Cook for about 15 minutes until the fish is firm and opaque. Stir gently from time to time. Check the liquid level from time to time and top up if it starts to dry out.

    ADDITIONS & ALTERATIONS

    Use cod, coley, haddock, hake, ling, plaice, pollack or whiting fillets. I’ve even made this with some frozen blocks of whiting.

    Don’t use smoked or dyed fish, because the spices give all the flavour and colour required.

    The quantity of chilli powder above makes for a mild curry. For a medium hot one, increase this to 1 teaspoon.

    Use 200ml (½ a 400ml tin) of coconut milk instead of the milk and creamed coconut.

    I always have frozen fish fillets in the freezer, they're so useful.

    I like smoked haddock. Usually I defrost them first but if I don't have time I just cook them from frozen. I like to poach them in the oven - place in a Pyrex dish or similar, add a few roughly sliced onions, a bay leaf and a few peppercorns, cover with milk and put in the oven at about 180ºC for about twenty minutes. You can turn the poaching liquid into a sauce (make a roux from flour & butter, whisk in the milk, simmer to thicken).

    Fish curries also work well with river cobbler, which is cheap too.

    I normally get white fish or salmon

    place on baking tray frozen

    cover in passata(sieved tomatoes)less watery than tinned.

    sprinking herbs

    Drizzle of oil

    cook at 200 for 15mins

    add grated cheese

    Cook for further 15-20mins

    done

    nice with salad or potatoes.

    Oddly ok mashed up and added to pasta.

    I do tend to use foil for fresh or defrosted fish but mostly cook them from frozen.

    Used to get mine iceland as they chepest but discovered farmfood much better.

    Wish I could find frozen seabass youngs used to do it but ahvent found it in years.

  • best way to make fish awful is freeze it. You can always tell fish and chip shops that use frozen fish. buy fresh you cant beat it. yeah it may be a bit more pricey but live a little and enjoy a little luxury
