How to make fish fingers?

I bought a thick piece of cod today and want to make some fish fingers for the kids. It's only a small piece weighing about half a pound I guess. Is it as easy as cutting them to size, dipping in egg and then breadcrumbs and then cooking? Can I cook them in the oven? Can I make it a bit more exciting? Think the kids would like them to taste like Birds Eye!

That is exactly how i make fish fingers, or chicken nuggets. I either fry or cook them in the oven, you shouldnt have any probs cutting the fish as long as you have a sharp knife. I also sometimes use a batter, (beer or fizzy water) i dont have the quantities, but its simply flour, a teaspoon of bicarb and the beer or water to make it into a thick batter. Dip the fish or chicken in and then fry!!!! When we cook them in batter, they do come out in funny shapes, but the children quite like that!!!!0

I used crushed cream crackers for my fish fingers the other day and they were lovely.I dipped them in buttermilk to make the crumbs stick as dd is allergic to egg.Thick yogurt works too, or even just dipping in water.

You can jazz up the coating with spices or seasoning mixes and grated parmesan.:)0 -

I'm sure you could soba,I've definitely seen recipes for chicken coated in crushed cornflakes.;)0 -
Kids loved the fish fingers, just cut the fish to size, dipped in seasoned flour, then beaten egg and finally breadcrumbs with some fresh parsley in. Cooked in the oven for 20 mins and they were delicious.0

Hi all,
I have a huge bag of tesco value fillets and was looking for a recipe for fish fingers that I could make and freeze to be used at a later date, just like the ready made ones. Fish fingers are the last convenience food I just can't give up, so I'm trying to find a way to make my own.

If the fish fillets are frozen already then wouldn't be a good idea to refreeze if you defrost them. You can make batches of the bread crumbs to freeze which makes making things like fishfingers easier.One day I might be more organised...........
