How to make fish fingers?

Our family love fish fingers, cod or otherwise, just wondered if anyone had made them and how to go about it.
I was considering buying some white fish fillets as opposed to spending a fortune on pre-made fish fingers.

I just cut the fish in to desired chunks, dip into egg then homemade breadcrumbs (which I have in freezer) then fry in a dribble of olive oil. I have add grated parmasen to breadcrumbs which is lovely.

I oven bake mine (as that's how I cooked the processed ones).
Any white fish. Pick over for obvious bones, take off skin, and slice into fingers. Dip in seasoned flour, then egg, then breadcrumbs. Cook as per Captain Birds Eye. They also freeze well (provided the fish hasn't been pre-frozen so is still suitable to be frozen raw at home)0 -
They are very nice made with salmon.Sorting my life out one day at a time0

I have used a 1 to 1 mixture of breadcrumbs and crushed cornflakes, break an egg into it and add a splash of milk to make a thick paste - leave in the fridge for a couple of hours and blend until smooth - then mould it round the fish (frozen or fresh) - then oven bake and you get a sort of batter coating IYSWIM, cel x:staradmin:starmod: beware of geeks bearing .gifs...:starmod::staradmin:starmod: Whoever said "nothing is impossible" obviously never tried to nail jelly to a tree :starmod:0

My husband actually fishes for trout, not that I would put it in a fish finger as I don't like trout, but salmon sounds good.Payment a day challenge: £236.69
