Hubby decided he wanted homemade fish and chips today, (cheaper than the fish shop) so off he went and bought some lovely boneless haddock fillets and we have just cooked and eaten it DELICIOUS:T But I had a problem getting the battered fish out of the fryer... as they had gone to the bottom and of course the batter cooked around the wire of the chip pan and I had a devils own job to get them out... What did I do wrong?... in the fish shop the fish seems to float in the oil but even if I fill the fryer to the MAX level the weight of the fish would take it down to the bottom...
Any suggestions? as it only cost us a fiver for the fish and a few potatoes so a lot cheaper than the fish shop and a bigger bit of fish....

I have seen Gary Rhodes and Gordon Ramsey cook battered fish. The trick is to hold one end in the hot oil till the batter flares then you can let go. The flared side keeps it floating.0

Well thanks so much for that , its simple when you know how isn't it? Hopefully I won't have to scrap it from the bottom of the basket next time...:T :T :T#6 of the SKI-ers Club :j

Try the next one without the basket.
As long as you have something handy to fish (excuse the pun) the fish out with.I used to be indecisive but now I am not sure.0 -
For a healthier, and less dangerous option (I dislike chip pan fryers; they are potentially very dangerous), you should try Gordon Ramsay's idea of part boiling them, then drizzling, then finishing them off in the oven. Easier, and a lot healthier for you.0

I made this for the first time a few weeks ago, and the same thing happened. As ariba10 already said next time I intend to try without the basket.
Also there is a recipe for healthy fish and chips on the cook yourself thin website on channel4.com which I will try too, but claims to have about half the fat IIRC.0 -
I don't use the basket either now after having the same 'sticking' problem. I found that the fish goes down to the bottom initially but then floats up as its becoming more cooked. It doesn't stick to the bottom of the fryer.
It does save you a fortune, I agree. We like sweet and sour chicken in batter so we've fried our own up and it was great. I think there are a few threads on here about recreating takeaways at home.MAY GROCERY CHALLENGE £0/ £250

lol, the chips - I don't think that would work too well with the fish, maybe some shallow frying though, with spray olive oil instead of deep sunflower oil.0

Could any of you share a good batter recipe?
I quite fancy fish and chips tonight but the cost of a taxi to fetch them would cost more than the meal itself!!
Thanks
