and for perfect crispy chips,chip the potatoes nice and thick make sure you give them a good rinse to remove starch,
fry them on a med heat until they are starting to turn a a very light shade of brown but still white lift them out leave for 20 mins then turn the heat to full drop the basket for a min or so they will brown very fast
,pour them onto kitchen towel,salt and vinegar straight away,you should have the perfect crispy chip0 -
Have to say that when I cook fish and chips for DD and friends I get a lovely crisp batter by mixing in a can of value lager with flour - that's all no milk. No basket for frying the fish let it cook and then fish it out with a fish slice - guess that was what they were first made for:oTrue wealth lies in contentment - not cash. Dollydaydream 20060

It never seems to be as good as chip shop batter, but I will let you in to a secret, when I worked in a chip shop the batter was a dry mix. So I still don't know the ingredients.
I agree with not putting the fish in the basket. It does float as it cooks.Anyone who lives within their means suffers from a lack of imagination:beer:

Now I know that I have seen a thread somewher about this but have searched & cannot find. So pls feel free to move pink winged.
I would like to make some chip shop style fish/fishfingers, however a few questions really. How do I make the batter? Can I oven cook it? Talking of oven cooking is there a secret to oven cooking chips? May sound strange questions but my deep fat fryer has broken.:eek: . Do not worry though OS stylers I am not planning on replacing it. So obviously will be using the oven more, but when I have done chips in the past they don't taste as nice. What am I doing wrong?

Could do with a bit of direction here please.
Well my OH bought some nice fresh cod fillets today, saying she wants fish and chips with my home made minted peas tomorrow.
That is fine, but she only eats fish that's been deep fried in a nice beer batter- something I have done several times before.
I however would like something a touch healthier.
But my suggestions of over baking, grilling or poaching the fish are apparently sacrilege to a British classic:rotfl:
I don know if i could get away with lightly frying the fish, possibly in a breadcrumb mix, might suggest that one latter.
Any one got any ideas,?

If you dunk the chips in boiling water for 5 minutes or so, then dry them, coat them in a little oil and bake them, they still taste great but aren't as fatty.
Can't help with the fish I'm afraid. I'm a batter girl all the way and have the lack of waistline to prove it.May all your dots fall silently to the ground.0 -
Yeah, I agree that absolutely nothing can replace the taste of the batter on fish! As long as you make the rest of the meal as healthy as possible, it won't kill you to have it occasionally...Trust me - I'm NOT a doctor!0

Looks like battered it is.
My chips and peas are pretty healthy though, I will keep reminding myself of this.
Think I am a bit to fussy with the occasional treat.
I lost a hell of a lot of weight last year (around 8 stone!!!), and after 7 months have successfully kept it off, dont want to put it back on!0
