What herbs/spices goes with fish?

I'm planning on making a fish stew tonight using smoked fish and cod. I normally cook it in parsley sauce and although its tasty, its now becoming a bit monotonous.

Can anyone come up with something more adventurous?:D

    I love dill with fish (both salmon & white fish) but I don't know how good it would be in a stew.

    Anything to hide the fishy taste would do it for me, I use plenty of tartare sauce when I have to eat fish.
    This is an open forum, anyone can post and I just did !

    dill works well with fish.

    I also like using an Italian tomato and mixed herb base for fish stew for a change. Just make it as you would for pasta, but with a little more stock to thin it out and allow it to bubble properly in the pan.

    If I am poaching fish, in milk, for a fish pie, I always add a couple of bay leaves. Then I use the milk as the base of my sauce. :)

    We make our fish stew with a tomato based sauce as well. Lemon thyme is loved added near the end.

    Hello there

    Just thought i would add my suggestion - hope its not too late:j

    I usually bake fish in the oven and IMHO fennel is the best for fish, also dill if you can get it - different types of parsley also make a good change.

    Not strictly herbs but I always put a few capers in my fish pie mixes and I'm sure they would also go well in a fish stew.

    Ooooo.... that sounds good.
    Is it just like a normal fish pie, adding curry to the sauce ?
    What do you use for the topping ??
