    How do you stop the pitta bread from completely collapsing??
    I find if you toast them or grill them for just about a few seconds or so then they are easier to cut open etc and fill when they are slightly warm. Use a smallish spoon to spoon bits into and don't shove stuff in too fiercely!

    Also seems to depend a bit on the make of the pitta breads as to whether they crumble. :o

    I also wrap them tightly in clingfilm so the stuff doesn't spill out and you can unwrap just the top and leave the rest in clingfilm while eating. ;)

    Could hubby benefit from having a thermos? If hes out and about a nice soup or even pasta or stews would be good heated in those especially in this weather!!!!

    My son likes to take toasted sandwiches to work with any of the fillings mentioned here already. Just toast your bread and allow to go cold before buttering, that way it will stay crispy.
  • Some of our fave fillings are:

    Bacon, brie and cranberry sauce

    Chopped chicken and bacon mixed with mayo

    Tuna, mixed with a few defrosted prawns, mayo and a teaspoon of tomato puree

    Crab sticks chopped up with mayo and a teaspoon of tomato puree

    Tuna chopped red onion and mayo

    Cheese savoury - grated cheese, grated carrot, finely chopped onion and mayo

    French salad - Chopped pork (PEK) diced very small, cucumber also diced small, tomato with seeds removed again diced very small, finely chopped iceberg lettuce all mixed with mayo.
  • If you've a Costco locally, check out their tubs of sandwich filling. You can get a large tub of chicken & bacon, 3 cheese & onion and tuna melt for around the £3-£3.50 mark. They're excellent! P.

    Tin of mixed beans (cannelini, kidney etc) mix with chopped toms (better if seeded) some chopped halloumi and a little greek yoghurt. Chopped chillies can add spice.
    Wrap this up in wholemeal wraps - tasty and very filling!
    If at home you can then toast the wraps, even nicer.
    I'm sure this recipie is on the BBC website if you want the 'real' instructions.
    A can of organinc beans is only 58p in tesco, and you only need a little haloumi (type of cheese, 97p for 250g, uses 85g), so I'm sure it's quite cheap.
