    Buy and cook a proper Chicken. You can then portion and freeze and bring out on the night before, ready to chuck in sarnies in the morning.

    Tins of Corned Beef last a few days, and any other neats that can be cooked.

    I do this and it saves loads. Plus it also saves if you use the meat from Sunday in either sarnies or a salad. :D

    Tuna mayo
    Tuna and grated cheese
    cooking and cooling a piece of ham and then slicing for lunches.
    grated cheese mixed with onion and mayo.
    Yellow stickered salmon...poached in oven makes a change for sandwiches.

    leftover meat & lettuce, tuna mayo, chicken breasts in HM coronation chix/chicken tikka sauces (which reminds me I have some in the freezer), banana, cheese & onion,

    Yes I would think it would keep for a couple of days, tbh I love it so much that I usually eat all I make!

    Tuna is a good one as well, we buy Morrisons "bettabuy" tuna which is only 29p per tin, very good value

    Mayonnaise had got preservatives in it....so, if stored at cool temp in fridge, both egg and tuna will keep for a few days.
    tuna may well appear to 'split' just make sure it is well drained before adding mayo.

    Hi there Redmel...

    Do you have a Herron frozen food shop near you? if so they do 200g cooked meats for 99p..and they include the breaded ham, smoked ham, beef, pork loin etc too and are really nice..

    Or if you have a LIDL near you.. they are selling the 1kilo gammon joints for £2.99 at the moment...(i have just picked up 4 as i find it much better that pre pack..and i will stick 3 in the freezer) which you could cook yourself -use the fuller slices for sandwiches, the little bits that fall off for pasta dishes or with the bits of leftover chicken to make pies and the stock you cook it in to make soup :-)

    Maybe also try doing OH as salad box....salad, bit of coleslaw, potato salad, hard boiled egg and the chosen meat/fish. You could also give him a piece of bread/barm cake.

    Hi all thanks for the replies.....

    We don't tend to have leftover meat because i usually batch cook it and freeze the meals in portions. I might start leave a bit out for sandwiches.

    I think i will try the tuna mayo and egg mayo ideas.....

    mrsmcawber, we don't have either heron or lidl nearby so no bargains for me.

  • Oh no! Lidl is great...Its my new found best shop now! Ive got a bit of ham in the freezer but 1 defrosting for slow cooker so might get another couple for future..

    redmel1621, I have read in another post that you can 'mass make' sandiches & put them in the freezer then everymorning take them out & they are defrosted for lunch..Post did say about fillings as im not too sure..

    Tuna Mayo sandwiches

    or do up a big pot of Pasta and tuna mayo at the beging of the week and just put into a small pot evryday
