  • I agree with you on the ham front, I've stopped buying it altogether as I don't think I'm eating healthy food and its expensive. Try making your own veg spreads. Mix a tin of beans (take your pick...butter bean, chick peas..) and mix with 2 tbspns tahini, olive oil, lemon juice and maybe some garlic. Keeps for a few days in the fridge. I also fry on onion and add pureed carrot, celery, parsnip, whatever I've got in and leave it to cool then spread on bread. Very tasty and cheap. Also you could try brie and grape, houmous and beansprouts in a pitta pocket, grated cheese and mayo and try varying the bread i.e. wraps, seeded bread, long thin rolls, pitta etc.

    some great ideas for me there but OH and will not like the meat free theme!!
  • I love ham sandwiches but don't like buying the plastic stuff and the premium stuff is sooo expensive. I buy a ham shank from the butchers for £1.50 and boil if for about an hour and a half, then let it cool and remove all the fat and then slice the meat. I usuually get enough for sandwiches for about a week, plus I get all the messy little bits of meat and throw them back in the cooking water with food processor blitzed raw onion, carrot and celery, a couple of bay leaves and a mug of dried red lentils or split peas (split peas are nicer IMO) and I get a huge pan of really filling soup. DD1 won't touch the soup but DD2 and I love it with crusty bread.

    I'd like to correct this. It is *only* cheaper to buy joints and slice them yourself if you don't have a meat loving OH that can and will devour a single large leg of lamb in a single sitting (on top of a normal roast dinner) regardless of how stuffed he is just because he loves the meat so much. That, or a lock on the fridge!!!

    Cheese savoury, can buy it made (usually expensive) or just mix some HM colesaw and a little grated cheese. Just had it for my lunch, yummy!

    Salads added to sandwiches mean having to add less meat.

    Ham shank I do aswell but I throw it in the slow cooker with loads of veg and broth mix stuff (added pearl barley as I love it) cook it in there then put out slice what I can for sandwiches, broth with the rest.

    The more salad you can use for sandwiches the better as it bulks it out, the thinner the meat the further I find it goes.

    Chicken sweetcorn and mayo is another fave of mine :)

    Hi

    Right after having fallen off the grocery challenge wagon I am planning to jump right back on starting January..

    Is what I need help with is finding some cheaper options for sandwiches. I have two boys, both take pack lunch to school. My dh has a sandwich every day with salad for lunch, i vary and maybe have one about 3 times a week.

    I always end up buying the Tesco no added water pre-packed ham/chicken, but it is working out at 1.75 a pack(i think) and we need about 4 a week so around £8 a week just on this one item, not including the salad stuff etc.

    Can anyone reccomend anything different that may work out a bit more cost effective. Now dh is fussy in that he likes to eat fairly healthy, although we are aware these may not be the healthiest options he won't touch the likes of spam/corned beef or any other tinnd meats.

    I realy need to trim back the shopping bill next year to pay off bills so any help/advice will be invaluable

    Egg mayo works out fairly cheaply, you could buy healthy (ish) mayo or even make your own

    You can also buy corned beef from deli counters, that's cheap but much much nicer than the tinned stuff

  • I'm not sure how far wrong you can go with good quality (so you use less) cheddar, salad and home made chutney. Hummus and cucumber is also a wonderfully filling option.

    That's a good idea ClaireLR, if i made up some and put it in an airtight container how long do you think it would last in the fridge, a day or two??

    You have also made me think, i could do the same with tuna. But again I am concerned with it going off.
