    Rather than buy sliced meat from the deli counter, how about cooking a slightly larger joint of meat when you have roast beef, pork etc and then slicing that up for sandwiches. I use left over roast chicken, with left over stuffing (deliberately cook loads lol) and redcurrant jelly in sandwiches. :drool:

    i love cheese and pineapple. sometimes with a slice of ham.

    chicken i with add mustard to the mayo and it is delish.

    of i will make a wrap , bit of lettuce , some rice , cheese ,mayo or ceaser dressing and either ham or chicken.

    cold sausage sandwiches are yummy.

    my hubby likes cold toasted sandwiches for work. he usually has mushroom , cheese and ham. i make the sandwich in the morning, and providing it is cooled before going into the lunch box, is doesn't go soggy.

    how about egg mayo , or salmon ( tinned ) with cucumber and mayo.

    not sure the excate recipe , but cornation chicken. can bulk it up with loads of apricots and sultanas. so yummy.

    sorry not very good at the costing at mo.

    What about BLT's? Or buying some value smoked salmon pieces and mixing with cream cheese, that will last for ages.

    Does it have to be sandwiches? What about bagels, wraps, savoury muffins, cold pizza, salads?
  • Thanks for all the fab ideas - think I would be cheaper to cook meat myself rather than but it ready done. I think a full chicken or streaky bacon or left over roast would work out a lot cheaper. Like the salmon ideas too -might have to give those a go aswell!!

    Me and OH like pitta bread with flavoured rice (can cook your own). When the rice is cool I add baby tomato's cut in half and sometimes a tin of tuna or salmon and then a squirt of salad cream to make it a bit less dry. I also add chopped lettuce and cheese sometimes if I have them already. Mix it all up and stuff in the pitta bread :D More filling than just a sarnie for me.

    Today's lunch was left over chicken risotto in wraps (cold). Quite nice too.

    On the subject of roasting chickens though... one of my favourite roll fillings is potato salad with chicken and sweetcorn. Yum!! ;)

    i love marinated chicken in tortilla wraps, with a selection of your fav salad items (especially shredded letuce and peppers) topped with a bit of hellman's... yum!

  • This is an old recipe that was my mum's and it's easy, cheap and tasty.

    Hard Boiled egg - chopped, Tomato - skinned and seeds removed then chopped (keep seeds to put in pasta sauce or soup), mix together and season to taste.

    It doesn't make the bread go soggy like tomatoes would and it goes quite a way too.

    Very economical

    How about good old Tuna mayo.

    Drain a can of tuna, add mayo, tommy ketchup and a splash o worcester sauce (if liked). Yummy, keeps the bread nice and moist too. You can add sweetcorn or cress to it if you want.
