quick help for bread

How do you tell when a mango is ripe?
Is there any reliable way to tell when a mango is ready to eat? Anyone got any ideas to stop salad going soggy?
I basically make up a big bowl of salad at the start of the week, but come the end it get's a bit soggy. Think the water is coming from the cucumber and/or peppers.
