If it's not too late I would like to join the chart. Although I only STS this week (Just worked out what STS actually stands for LOL!).
I cycled 7 miles today, but it was quite windy. Total cycling for the week is 31 miles. (If I do below 25 miles a week, nag me please - it always seems like such a hassle to get out in the first place, I have a habit of talking myself out of it, but if I actually get my backside into gear, I realise it soooo straightforward. I guess I just got used to not being able to move and revert to that way of thinking - even going to the bathroom used to be a major undertaking).

Suggs You too deserve a mention, 80lbs seemed an almost impossible task until I read your story and saw what you achieved. I wouldn't have joined this forum had I not read that - I usually avoid this sort of thing (too shy!)

Good advice on cooking fish there - I tend not to do it as OH won't go near the stuff. Shame as i quite like it.
Funny you should mention muffins 10past - I have some in the oven right now! For an introduction to baking muffins are ace - you just mix the dry ingredients, mix the wet ingredients and then smoosh them together. I won't put them in the LW recipe thread because they aren't lw! I'm going to give you 2 muffin recipes, 1, the fruit one that you asked for, and 1 that I've done and I know turned out well. But first . . .
Top tips for muffins
muffin tins are much deeper than bun tins. YOu can substitute a bun tin but you'll need to watch the cooking time and you'll get a lot more out of them.
Don't expect them to turn out as huge domed things like you get in starbucks - they won't
Don't over mix - they should be lumpy
Paper cases are a faff. Spray a bit of frylight into the muffin cups, or, invest in silicon bakeware( the bendy ones) they are expensive but if you bake regularly they'll be worth it
Get a set of measuring spoons and a digital scale. I got my scale at Tesco(£15). It means you can you just sit your bowl on the scale and keep resetting it to zero. No faffing with loads of extra bowls
Fill normal muffin pans 2/3 full, and mini ones nearly full. For the dome effect, overfill the pans and then have fun trying to scrape them free
You don't need to change recipes for mini or normal muffins. Normal ones take about 20 mins to cook, mini ones 10-15 mins. Keep an eye on them!
You don't always have enough mix for the full pan. Fill the empty cups with warm water to stop your pan distorting
Muffins keep for about 3 days if you are lucky. But they are better eaten fresh
overnight fruit muffins(taken from Muffins Galore, Catherine Atkinson ISBN 9781846012617)
225g plain flour
25g oat bran( find it in the cereals aisle or with the flour, I got mine in morrisons)
100g unsweetened muesli
100g soft light brown sugar
1 1/2 teaspoons ground cinnamon
1 teaspoon bicarbonate of soda
90g ready to eat dried apricots or dates, cut up with scissors
1 egg lightly beaten
375ml buttermilk(find it with the cream in the supermarket)
125ml veg oil
2 tablespooons demerara sugar to decorate
Mix the flour, oat bran, muesli, brown sugar, cinnamon, bicarb and dried fruit in a bowl. In a separate jug mix the egg, buttermilk, and veg oil. Pour the wet ingredients into the dry ingredients and mix till just combined. It is supposed to be lumpy! Cover with cling film and refrigerate for 8 hours or overnight.
When ready to bake, preheat oven to 190C/Gas 5. Grease a 12 cup muffin tin. Spoon the batter equally into the cups. Sprinkle the demerara sugar over. Bake for 20 minutes until firm and well risen. Cool in the tin for 10 minutes, then turn out onto a wire rack. Eat warm or cold.
Chocolate Malt Muffins( as above) 86 syns for the whole batch( i got 22 minis that makes them 4 syns each)
250g self raising flour
3 tablespoons cocoa powder
2 tablespoons horlicks(or similar)
1 teaspoon baking powder
1/4 teaspoon bicarb
1/2 teaspoon salt
110g caster sugar
1 egg, lightly beaten
225ml milk
2 teaspoons vanilla extract
75g melted butter
Mix the dry ingredients. Mix the wet ingredients separately. Mix till just combined. Spoon into the muffin cups, dividing evenly and bake for 20 mins or until firm and well risen. Cool in the tin for 5 minutes then cool on the wire rack. Eat warm or cold
