_party_HAPPY BIRTHDAY WENDY!!! _party_
Hope everyone's alright. Finally got time for a proper catch up
Firstly welcome Claire1234 & well done to all the losers and STSers!KPC (several losses in a row now!), DenBo, Tagz, The Dragon, PinkLippy, Efrieze, Grannynise, Nicci (wow - 9lb would probably take me three months to lose!), Wendy, Lemon Drop, Sue-UU, Ampersand, Nessa... I hope I haven't missed anyone
Thanks again for the birthday wishes yesterday, I had a good day, allowed myself a couple of treats but didn't go overboard - 1613 for the dayStill got a target to reach... have learnt a valuable lesson that 3 weeks isn't long enough for me to shift 5lb even at maximum effort. So I will need to start earlier in future
Vix - how did you get on with your late evening at work? Are you just doing the one late night there? Glad you enjoyed working at the cruise port, and good luck when you're there alone this weekend, I'm sure you'll be fine!
BB it does sound very interesting being an exam case study! Well done to MrBB, and you know as well as I do that 1lb on is still a very healthy maintain as long as you have an equal amount of 1lb lossesOne day I'll put up my weight loss line chart and you'll see the up and down 'squiggly line' since I've been trying to maintain :rotfl: It looks like a mountain range
I was back in Debenhams today - yes AGAIN - this time I took back a jacket I bought two weeks ago but was never quite sure about. I don't normally do that as I usually make 100% sure I'm happy before buying, but that time son was with me and it was a bit rushed. Anyway, exchanged it for one I liked MUCH better - and with the sales etc ended up £19 better off on the deal plus a free box of chocciesKer-ching!
Tried to get measured into a new sports bra but there was nothing at all that fit me nicelyThe shock absorbers that seem to suit just about everyone are horrible on me.
Oooh congratulations Wendy on your nomination! Good luck with that!
Lemon Drop, it was windy out on the bike yesterday for me too, even more than the day before. Why does that wind always seem to be in the wrong direction too!!!I wimped out today and took the car into town. It was raining, and as I was taking a jacket back I didn't really want it crumpled into my backpack
Excuses, I know
Victory I hope you get through the day OK with the wicked witch of the west boss.0 -

Hi katie
Re your muffin receipe below, some of your ingredients I don't have, I did make some muffins using this recipe:
"The one I use all the time and never fail with is.....
300gm s/r flour
150gms sugar (preferably soft brown or caster)
1 medium egg
175mls milk (supposed to be buttermilk - I use semi skimmed)
125 mls veg oil
That's the basic mix - to which I normall add around 200 gms of fruit.
Sieve the flour, add the sugar and fruit. Mix egg, milk and oil and add to flour/fruit/sugar, stir but don't get rid of too many lumps.
Bake 190/gas 5 for about 20-25 mins - cool on rack or they'll go soggy"
I don't think it's a healthy recipe, but for my first time, I'm pleased with myself.
The problem I'm finding is I have bought loads of ingredients for cooking, but I never seem to have the ones I need.katiepoppycat wrote: »overnight fruit muffins(taken from Muffins Galore, Catherine Atkinson ISBN 9781846012617)
225g plain flour
25g oat bran( find it in the cereals aisle or with the flour, I got mine in morrisons)
100g unsweetened muesli
100g soft light brown sugar
1 1/2 teaspoons ground cinnamon
1 teaspoon bicarbonate of soda
90g ready to eat dried apricots or dates, cut up with scissors
1 egg lightly beaten
375ml buttermilk(find it with the cream in the supermarket)
125ml veg oil
2 tablespooons demerara sugar to decorate
Mix the flour, oat bran, muesli, brown sugar, cinnamon, bicarb and dried fruit in a bowl. In a separate jug mix the egg, buttermilk, and veg oil. Pour the wet ingredients into the dry ingredients and mix till just combined. It is supposed to be lumpy! Cover with cling film and refrigerate for 8 hours or overnight.
When ready to bake, preheat oven to 190C/Gas 5. Grease a 12 cup muffin tin. Spoon the batter equally into the cups. Sprinkle the demerara sugar over. Bake for 20 minutes until firm and well risen. Cool in the tin for 10 minutes, then turn out onto a wire rack. Eat warm or cold.
Chocolate Malt Muffins( as above) 86 syns for the whole batch( i got 22 minis that makes them 4 syns each)
250g self raising flour
3 tablespoons cocoa powder
2 tablespoons horlicks(or similar)
1 teaspoon baking powder
1/4 teaspoon bicarb
1/2 teaspoon salt
110g caster sugar
1 egg, lightly beaten
225ml milk
2 teaspoons vanilla extract
75g melted butter
Mix the dry ingredients. Mix the wet ingredients separately. Mix till just combined. Spoon into the muffin cups, dividing evenly and bake for 20 mins or until firm and well risen. Cool in the tin for 5 minutes then cool on the wire rack. Eat warm or cold

Well done on your first attempt!
These loads of ingredients you've bought - did you buy them on spec or did you have dishes/recipes in mind when you bought them?
I keep supplies of a few storecupboard basics, but other than that I plan meals and then shop for those ingredients I specifically need. I wouldn't expect to already have everything in if I was trying something new
For our favourite regular meals we can bulk buy ingredients and often save more money that way.
Hope this isn't just stating the obvious - and you must tell us how your muffins turned out!0
