I think I've figured it out.
Underneath the "Postage set-up" it then says "Simple Delivery".. below that "Package size".
    Click "Package size".
Then click "Switch to custom package"
Then back near the top below "Postage set-up" it will now show "Custom postage" or your policy will apply.

    How convoluted.
Thank you, Ive found that now but what a long winded way it is. If like me you are just selling odds and ends, all different, the time spent listing  is going to end up making it not worth the bother.

I’ve been “end listing/sell similar” with some of my items and I counted 25 clicks to get the listing how I wanted it.  This was to remove collect in person, remove international shipping, remove offers and change simple delivery to my custom postage.  And nothing is selling anyway.  On the other hand items on Depop stay listed indefinitely and if you want them to be “relisted” to get more exposure, it takes 3 clicks.  It doesn’t make sense.

I’d suggest looking at your business policies (even the private accounts have business policies] as all of that, apart from the new simple postage is pre set in those policies.

I’ve been listing this morning , I add my photos, do my description and choose a price, then click to advanced selling and choose to add my own and choose which business policy I’m using. For example I have LL up to 100g , RM standard parcel and RM48 etc. within that pre set policy is my despatch time and my GSP settings, all are pre set. For some items that can’t go GSP I have policies for the usual postage but just with GSP removed. That’s all I have to do, I have the same return policy pre set for all my listings. So apart from having to remove the simple delivery in my LLs , everything else is preset. Assuming I have my photos are already done, it takes me a couple of minutes to complete a listing.

Go to the seller hub and look for site preferences. Then on the left hand margin find business policies, that gives you a screen where you can set up all your preferences including postage, returns, payment etc. Unfortunately it doesn't seem to offer an auto opt out for simple postage, but everything else can be set.

Incendently, if you have all your postage preferences set up it makes it easier to bulk edit all your listings when postage prices change. You just change the policy and click to apply it to all current listings.

Still trying to get my head round this simple delivery if anyone can help.

For small parcels, I used to pay £3.25 online or £3.39 Tracked48.  Through simple delivery it is £2.94, so  cheaper.  I don't need to worry about compensation as it is all up to £100 - am I right?  And it will always be sent via RM right?   I have just done 2 listings using simple delivery and I wasn't asked to choose RM or Evri so I am assuming it will be RM.

Also above will be cheaper for up to 1kg only.  For 2kg it will be £3.71 so I will be better off buying my own postage at 3.25/3.39?

For large letters most of mine cost 1.55 so SD will be expensive so I can choose my own delivery.
I am selling my fabric remnants which usually are large letter but how does Ebay know whether it will be large letter or small parcel?  Sometimes the fabrics are over 2.5 cm in depth.
Perhaps I need to do a couple of listings as a trial and see how it works!

You select the weight and size of the parcel, between padded envelope, shoe box, cabin luggage etc.  My guess is that simple delivery will then choose the cheapest option for the buyer.
£2.94 is the price for evri up to 1kg, which is cheaper than royal mail.

Buyers can choose between Evri and RM, I am currently trying to see if it is possible to turn one of those options off.

Ebay will take the measurements you put in to the appropriate box (it's always been there but people rarely use the option) so if fabric is over the LL size it is ebst to populate that area to ensure that if RM is chosen that you get the correct label.

    Simple Delivery | eBay

There is a link on that page to toggle off any options you don't want, which I am currently experimenting with.

You'll automatically be opted in to use all carriers that are available in this programme. If you would prefer not to send your items with a particular carrier, go to the Simple Delivery settings in your Postage preferences and adjust the toggle next to the carrier.

Ive just done 4 listings and the faffing around is crazy. I decided to try a Simple Delivery to see how how it went and for a ladies T-shirt the postage is £3.74, same to either the buyer or to me if I do free postage. Much more than it would cost me normally.

Is anyone actually using Simple delivery and finding they like it better?

Couple of things occur to me reading through this.
Recently I messed up on postage charged when I came to send, I just obviously sucked up the difference myself.  What if this had been Simple Delivery and the label produced was rejected by Evri say as overweight.  Sounds like it could be a nightmare.
I also haven’t seen anything to see how combined postage might work.  I’m sure combined postage rates have helped me sell multiple items many times.
