    I finally got around to making these fritters which were surprisingly easy and quick although the oil does spit like nobody's business.



    Eaten with massive fridge raid salad dressed with last bit of dressing I made earlier in the week followed by sliced pineapple and banana and a decaf coffee.

    Suns out already, blackbirds are belting out their song, coffee in hand - perfect 😍 

    OH is going to clear an area of the garden that started as vegetable beds, but now it’s just the 2 of us we don’t need all of it, so half of it will become a rose bed with interspersed lilies, alliums etc - we’re starting with climbing roses at the back - Gertrude Jekyll for anyone interested 😉

    To the food, I’ll make a caramelised onion and goats cheese tart with thyme and honey, not nuts as I cannot be bothered with the shopping part…. Potato salad and green salad, might make some bread to have for lunch.   For some odd reason I have a fancy for cheese and onion rolls, if I have enough cheddar I might make some - I’m carb craving 🫣

    Edit: On checking fridge, found a pack of feta that needs using, so feta and spinach parcels instead 🙌

    I picked up lots of broccoli, whole milk, wholewheat pasta, and panko breadcrumbs (amongst other things) at the Community Fridge yesterday so am making a broccoli pasta cheese bake for tonight. There’ll be enough for two days’ meals which is a slight problem because Mister CJ says he’s gone off broccoli! I’ll zhuzh it up by adding some diced shallot and red chilli, so hopefully that’ll make it more acceptable 😂

    @C_J we toss cut up Broccoli in a little olive oil and grated Parmesan and bake till crispy at the edges makes a nice change 😊 ps use nutritional yeast flakes when the vegan visits 👋

    Lunch is the remaining spinach and feta rolls, which were delicious 😋 

    dinner, a pair of (local farm) rump steaks from our freezer stash with Padron peppers, salad and the remaining jersey royals for him.

    bright and breezy here - had a second solar battery fitted Friday, so the more sunshine the better 🤗

    I made leek soup for lunch, and tonight I’m doing roasted sausages with the roasted broccoli and Parmesan suggested by @Islandmaid (thank you!)

    Strawberries (huge Finest packs x 2, reduced at T’s from £3.40 each to 50p …. and they’re perfect!) and cream for puds over the next few days.

    Beef and Yorkshire puddings with veg here. Inlaws will have  dinners plated up for Monday and Tuesday.
    I'm not sure what I will have, not been feeling too good the past couple of days so may make some soup.  Failing that probably jacket potato and beans.

    Lunch was an ASDA Mediterranean style salad, with added organic cherry tomatoes,  beetroot and cucumber plus prosciutto di Parma and Newman's Own Italian Style Dressing which was way too vinegary - and I like apple cider vinegar ! 

    Supper could be kebabs from the freezer (meat, harissa Halloumi and chicken) or  TGI Friday's nacho cheese and jalapeños loaded potato skins with Mediterranean style vegetables or lamb shish kebabs, garlic sauce and salad from local kebab shop.

    There's the gammon roast and jersey potatoes with a "hunter's" sauce.  (essentially a package sauce mix from Knorr that is meat and mushroom based - only seen it in Canada and in Germany where it's sold as Knorr jaeger's sauce)

    Absolutely hoofing down with rain this morning.

    GS with us for the rest of the week, so meals will be to suit.  Roast chicken thighs tonight with roasted med veg cous cous and garlic yoghurt. Mini cornetto for pud for small hands 😉
