    Sorry to piggy back onto this thread but I always have problems with a soggy bottom :o:o:o:o
    Ive tried a few recipes and the base is always wet, even if I wrap the tin in multiple layers of foil before putting in the waterbath to prevent cracks.

    Do either of the recipes you kind folk have posted have the luxury of a crunchy base AND no cracks?

    No need to apologise! I think a certain amount of sogginess is inevitable if any cheesecake is cooked in a water bath.

    I have read that the way to avoid cracks is to leave the cheesecake to cool down in the turned off oven, with the oven door left slightly open. A generous sprinkling of browned almond flakes, grated chocolate or any other decorations (fresh fruit perhaps) hides any cracks nicely! I think the secret might be just to not overcook.

    I wonder whether baking the base before putting the filling on might help to avoid soggy bottoms?

    well im quite shocked no-one has offered you this link its a bbc good food one and it is very nice when making it i use basic cream cheese and frozen basic red berries and it comes out lush also i tend to double up the base ingredients just because i like a thick bottom

    Ive always made nigellas new york cheesecake which is baked, it is highly calorific but I have made it loads of times and it is absolutely gorgeous

    Hi,
    I have done a search through the forums and online in general but I haven't found a good lemon cheesecake recipe (I didn't find any recipes on here).

    I am looking for a no bake cheesecake that will hold its shape when I take it out of the tin. I had a recipe a few years ago which had (I think!) cream cheese, condensed milk, cream and lemons. But can I find the recipe, oh no!!

    I am using a 9 in round tin and it is for a friend at the weekend so it needs to come out if its tin, on a nice plate then transported by car for a fancy dinner party. I would be sooooo grateful if anyone had a recipe that has been tried and tested coz I am running out of time!

    Whisk a large can of condensed milk add a pint of double cream - keep whisking and then add the juice of 4 lemons and juice of 4 limes

    Usual base of 5 oz melted butter with 1 and a half packets of digestive biscuits ( made into crumbs) and gently put in bottom of tin. Don't press down too hard as it won't look good when you cut it.
