Raspberry & White Chocolate Cheesecake
Packet of raspberry (or any fruity flavoured) jelly, made up to 250lm with boiling water
100g block white chocolate OR 100g caster sugar
250g digestives (or shortbread) biscuits
100g butter
2 x packets of cream cheese
200 ml cream
Method
1. Make up jelly
2. Melt chocolate (in a bowl over a saucepan of boiling water).
3. Crush biscuits & melt butter (in microwave is easiest), then mix & layer tin (I use a spring sided tin & put a layer of greaseproof paper in the bottom).
4. Whisk together cooled jelly mix, cream cheese & ¾ of the melted chocolate (or caster sugar) & then fold in the cream & pour over base
5. If you used white chocolate instead of caster sugar use remaining ¼ of sugar to drizzle over mixture so it forms fine ribbons, you can decorate with fruit after chilling in the fridge to set.
You can use strawberry jelly & shortbread biscuits
Or lemon or lime jelly & ginger biscuits
Or gelatin & Baileys (reduce the cream)0 -
I just had to report back and say a big thank you to grunnie. The cheescake was wonderful. I did a trial run before the weekend and everyone loved it. I cut back a bit on the base, using just under 1 pkt of biscuits. I used the juice and zest of 4 lemons and I made some candied lemon peel to decorate. I think cheesecake will become a regular treat in our house now, thank you for the brill recipe!!0
