Cheesecake Recipes and questions?

I'm going to my friends house for dinner/dvd on Friday eve and I offered to make a cake for dessert as my contribution.
She's told me her favourite dessert is Cheese Cake though!
- Does anyone know a cheap recipe?
I will of course cut and paste to the recipe thread..

I've made my debts bite-size too depressing to look at all at once so am handling them one at a time - first up Graduate Loan £1720 paid off! only £280 to go!!!

    Nobody does it better than Delia. It shouldn't work out too expensive. You could get value cream cheese and digestives a small tub of sour cream is only about 50p and I'd use a tin or fresh satsumas to decorate.

    You can make sour cream by adding a spoonful of vinegar to milk:)




    ....... or is that sour milk, or do you add vinegar to cream ....... !!!!!! my brain aint working today :(

    Confession time:

    I make cheesecake out of a packet. Greens cheesecake mix is about 50p & all you need to add is milk & some butter. I add a crumbled flake or some fruit to the top & no-one ever knows it's not 100% HM (well, they will now I've told you lot!)

    I never use sour cream, replace it with value brand plain yogurt 34p a pot. have also used little pots as well, was being experimental with toffee yogurt but it didn't really taste any different :P also, the recipe I have calls for 4 eggs but I only ever use two, hehe, mainly because I wanted 'less fat/cholestrol'... I've never actually made a proper cheesecake, just the American version that requires baking (as opposed to leaving in the fridge to set) so I've never had to buy gelatine (less money spent!) and the cake's just as lovely (IMHO ;) )

    but am definately going to replace the sour cream with yoghurt! great suggestion thanks!
    nb Delia saya use 8 inch baking tin - but I only have a ceramic oven dish (shallow) - du think this will matter? I'm sure everyone will get over the weird shape!

    I do one (which is my Mum's recipe) a bit like Delia's, but is easier. However, I'm not really sure of the measurements (I know, it's not that helpful!), but it goes something like this...

    Crush up your digestives
    Add some demerera sugar
    Mix together with melted butter

    Push down into the container, and allow to cool in fridge (or freezer if you're in a hurry)

    In the meantime, whip some double cream (a medium sized tub) and then mix/fold in some cream cheese. Once base is firm, spread cheese mix over. Allow to cool again.

    You can either use a tin of fruit filling, or real fruit for the topping.

    I'll see if I can find the whole recipe.

    I'm using loads of sour cream at the moment because I keep finding it in the reduced cabinet at Asda for about 6p a pot which is cheaper than yoghurt :D

    Now you mention it, it is one of those things I see in the yellow sticker section all the time - stupidly cheap and I never by it cus I think what the heck would I use it for! - well now I know!
    Can you freeze sour cream?

    Don't know, never tried but you I can give you another use for it; use it to cool down hot chilli's and (I guess, don't like them) curries.

    I serve it if we have build your own fajitas or burretos or that sort of thing. I put tortillas, filling, HOT, HOT salsa and sour cream for when you put too much hot salsa on, on the table :D

    You can use it pretty much anywhere that you'd use natural yoghurt I should imagine, and I've made naan bread using both (not together of course!) before now, if that helps :)
