white chocolate cheesecake
4oz digestive biscuit crumbs and 2oz melted butter for your base
400g white chocolate
284ml double cream
500g full fat philadelphia (or half and half philly and marscapone)
decent vanilla essence (optional but nice)
whip the cream, add softened philly, add a bit of decent vanilla essence if you have it then stir in slow melted white chocolate. Put it on top of the base and leave overnight
dont try low fat cheese it makes it too runny.

Thanks for that (sorry for crashing your thread looby - but hopefully this is a useful question!) - what would you class as decent vanilla essence? I've only ever used the little bottles in baking etc.?

I tried this one an Saturday - it was on the telly in the morning.

I chnaged it a bit - I made it in a big cake tin that the bottom comes out (so you can push it up and out of the tin) instead of the fiddly little ones. I used digetive biscuits and butter instead of the gingerbread (only because you had to leave gingerbread out overnight to dry and I wanted it for that night). Because it was a big cake instead of small ones it took longer to chill (probably need at least three hours). Then I sliced it, put slice on plate and spooned the strawberries with balsamic vinegar next to the slice. Went down REALLY well and need to invite some friends round for dinner now I have tried it out on the family!
Oh by the way I assumed that cream cheese is philly - that's what I used.0 -
