Here's a recipe for cheesecake cupcakes that look easy enough. I haven't tried these myself, but have tried other recipes from this site and they have been very good.0

The easiest recipe is:
200g digestives crushed
3 oz melted margarine
Mix together and press into 8" lined cake tin. Chill until it's hard.
Mix together 500g marscapone cheese, 2oz icing sugar and the juice and zest of 3 limes. Add to the base and put in the fridge to chill.
Just before serving, remove from the tin and tip a tin of blackcurrent pie filling over the top.
It looks good and tastes fab. I've had loads of compliments about it.Here I go again on my own....0 -
When I do Bannoffee Pie I always boil mine for about 2.5 - 3 hrs. I also make sure I turn the tins over in the saucepan half way through and keep the water topped up over the top of the tins (so use a nice big saucepan, it makes it easier).
I don't know of any shortcuts for this but I can tell you that it makes a fantastic tasting Bannoffee and I really only do it on special occasions. I would eat too much of it otherwise as it's totally gorgeous - yum yum0 -
Same base with digestive biscuits - take mascarpone cheese, lemon curd, whipping/double cream - blend cheese and lemon curd - beat up cream and fold in then place in base - very quick to do and lovely. Dont add too much lemon curd - taste it to see what you like best as you add it! Can always add more later.Saving in my terramundi pot £2, £1 and 50p just for me! :j0

My OH makes the easiest 'cheesecake' ever. I say 'cheesecake' but there aint no cheese in it...... I love it though and there's virtually no work in it
What you do is make a plain digestive base, with a bit of lemon juice in with the biscuit to bind it. Pack it into a plastic tub or glass dish and really squash it down. Then you make up a couple of packets of angel delight and pour it on top. Leave it to set in the fridge and there you go.
Lemon juice instead of butter makes the biscuit a bit crumbly but he says that butter would make the angel delight taste funny.DFW Nerd no 239.....Last Personal Debt paid off Nov 2012!
