  • dont have any measurements coz i do mine guessing.
    cream cheese
    sugar
    and double cream
    and gelatine
    thats the basic topping
    but make baileys and chocolate. strawberry and white chocolate
    lemon and lime. chocolate and cointreau
    these are non cooked ones
    cream sugar and cheese add double cream then desired flavours double cream whip until quite thick then add the gelatine add tothe biscuit base.
    have used digestives gingersnaps orange digestives to whatever flavour i need

    ........ok it was more of a hobble after saturday nights alcohol induced injuries.

    From the side of a Nestle Condensed Milk tin the nicest and easiest cheescake recipie i have ever done.

    Apparently serves 6-8 i beg to differ, it serves me

    3oz butter
    8oz digestives crushed
    30mml double cream
    juice and rind of 4 lemons
    1 (397g) can of condensed milk

    Melt the butter and stir in the crushed busciuts, press into the base and sides (i never do the sides) of a 8" loose bottomed tin. Chill
    Whisk the remaining ingredients together until thick and creamy, pour over the biscuit base
    Chill (it then says decorate but i just eat it!)

  • rchddap1, you can have the mandarine one I suggested, you can use any fruit at all, there's no cheese, just jelly fruit and evaporated milk!!!

    Chocolate Cheesecake

    Base - Crush packet chocolate digestives and stir in approx 75g melted butter. Press into tin
    Topping - large carton double cream, 400g philadelphia (or similar but not the low fat one as it wont thicken). 75g castor sugar and 75-100g milk chocolate.

    Cream philadelphia with sugar, Whip cream and fold in. Melt chocolate and fold in. Pour over base and put in fridge. Decorate with melted chocolate or grated chocolate.

    A Dieters paradise!!

    For bailey's cheesecake I add the Baileys to taste (approx 45ml) and leave out the melted chocolate and I just use plain digestive biscuits.

    Baked Lemon Cheesecake


    Ingredients
    Base:
    8 oz (250g) digestive biscuits, crushed
    4 oz (125g) butter/margarine melted
    4 oz (125g) sugar

    Filling:
    1 lb 4 oz cream cheese and/or curd cheese
    2 lemons zest and juice
    2 eggs
    2 oz raisins
    3 oz sugar
    ¼ pt double cream (or milk)


    Method

    1. Preheat oven to 160°C/ Gas Mark 4
    2. In large bowl mix together crushed biscuits, melted butter and sugar and spread onto base of tin (line base with baking parchment for easier removal & serving)
    3. In another bowl, place cream cheese and beat until smooth.
    4. Add the cream, eggs and sugar and whisk.
    5. Pour in lemon juice, zest and raisins and mix well.
    6. Pour onto biscuit base, level and bake in oven for 35 – 40 mins or until feels set. Can finish off with thin layer of soured cream on top if liked and return to oven for another 5 mins to set cream.
    7. Chill, preferably overnight to allow flavour to develop.
    8. Enjoy!

    Thanks so much for that recipe Hex, I had my folks over last night for a birthday meal for my mother and made this for her - went down a real treat and is SOOOO easy to make!!
