    we had a bit of a contest at work at christmas and the white chocolate one beat off contenders. the daft bit is that I am not keen on it and make it for my lovely husband ......!

    rchddap1 - fully sympathise, I didn't eat soft cheese either on the better safe than sorry theory.
    The white chocolate one was developed with two smalls climbing up my ankles and is a great simple and fairly cheap recipe for when you are very distracted or pushed for time

    RachieB - I read it as you were a little bit envious rather than sarky - as was I. I think it is always nice to feel someone is bothered, regardless of whether it is well founded.

  • My OH is away for the week so it looks like im having cheesecake for breakfast lunch and dinner - its a tough life....

  • White Chocolate and Baileys Ice cream



    Melt 100g (3 1/2 oz) roughly chopped white chocolate in a heatproof bowl over a pan of gently simmering water, making sure the base of the bowl doesn't touch the water. Meanwhile, mix together 500g carton fresh vanilla custard and 71 ml baileys (a mini bottle) in a large bowl. Beat in the warm chocolate, then gently fold in 284ml carton extra-thick double cream. Spoon the mixture into six 200ml (7 fl oz) ramekins or three ice cube trays and freeze for at least 2 hours or overnight. Soften at room temperature for 10 minutes. If you used ice cube trays, turn out the cubes of ice cream into six tall glasses. Decorate with thin shreds of orange zest and some pared white chocolate.

    from what I can see they all want cream cheese, not cottage cheese :(

    Im sure Ive used cottage before?

    Im sure Cot cheese cant be frozen, might have to bin it :cry:

    Push your cottage cheese through a sieve,drain the excess liquid off first.

    That`s how I did cheesecake at school in HE,many moons ago.Although I did forget to put the cream in it! Still ate it!
