Best one I ever did was a gordon ramsey one from the cook-along programme on TV. My cheesecakes are always a bit hit and miss. I think it was (best google the recipe - it'll be available somewhere)
1 small tub of double cream
small tub of soft cheese (philadelphia)
about 50g icing sugar
crushed biscuits (half a pack-ish)
about 25g butter
This is all v sketchy from memory but
bash the biscuits and coat with the melted butter
squish into the bottom of a flan tin/ceramic dish and chuck in the fridge to set
stir the icing sugar into the cream cheese
whip the cream into soft peaks
fold cream & cheese together
pour ontop of biscuit base and throw back in fridge (or freezer if you're in a hurry)
& fold into .0 -
